This guide states no price, availability, safety certification, universal PPE class, sharpening angle, sanitation recipe, or regulatory approval.

Job: convert a real cutting task into a written knife specification: open 8- or 10-inch traditional pattern, 14-inch pointed pattern “with Guard,” 14-inch round-tip safety pattern with heavy steel shield—or none of these.

Result: the buyer can name the task capability each selected feature earns, the hazards it reduces, the hazards it leaves, the people and programs that approved it, the trial evidence that supports it, and the conditions that force reassessment.

Time: no universal selection or trial time applies. A simple owner-operated bench and a staffed production line have different evidence burdens. Observe enough normal cycles, changeovers, cleanup, edge service, interruptions, and credible abnormal conditions to see the whole task; do not let a purchasing deadline define the denominator.

Difficulty: hazard analysis and change control. Blade length is easy to compare. The hard work is deciding whether a point is actually necessary, whether hand protection belongs in the knife or elsewhere in the system, whether the sanitation program accepts the construction, and whether a new pattern quietly transfers risk to grip, reach, posture, product, or maintenance.

The exact tools from this catalog:

Candidate for close, wrist-steered work when an open pointed pattern is permitted.

Candidate for a broader, stiffer, longer draw when an open pointed pattern is permitted.

Hyde states that its round end protects workers’ feet from accidental drops, its heavy steel shield protects fingers, and its sharp 12-gauge blade is semi-hollow ground. Candidate where a fourteen-inch edge-entry draw is required and point-first work is not.

A knife supplies none of that system.

Before comparing knives: define the decision

Write the station sentence

Name one station, one incoming material condition, one intended cut, one support method, and one acceptable result. “Need a safer butcher knife” is not a station sentence. “At the released slab station, a trained operator starts at an exposed near edge and draws through a supported mass no deeper than the qualified stroke, with no point-first entry” can be analyzed.

Separate distinct tasks even when one worker performs them. Close trimming, deep edge-entry slicing, opening an interior cut, cutting around structure, clearing a jam, sharpening, washing, carrying, and storing are different exposures. A knife that fits the normal cut may be wrong for the abnormal task. Do not average them into “general cutting.”

State what these knives will not do. They do not replace skinning, boning, bone sawing, chopping, machine cutting, jam-clearing tools, or a dedicated insulation knife. They are fixed-blade draw-cutting patterns. If the desired motion is prying, twisting, striking, probing hidden structure, cutting against a backing that must survive, or entering guarded machinery, leave this line.

Freeze the people and conditions in scope

Record who uses the station, who works within the blade’s travel or drop zone, which hand is dominant, whether workers rotate, and who services the edge. Include new workers, relief workers, sanitation crews, supervisors, maintenance, and anyone who reaches across or passes behind the station. A selection that works only for the most experienced cutter under ideal staffing is not yet a station standard.

Do not invent a universal material limit from blade dimensions. The trial establishes the local operating envelope; the written process owns the material specification.

Map starts, stops, changeovers, interruptions, rework, edge exchanges, cleanup, and storage. NIOSH’s meatpacking laceration research found elevated risk around sharpening, equipment malfunction, unusual methods, and unusual tasks; those are reasons to examine transitions explicitly, not footnotes to the normal cycle (NIOSH record and study summary).

Ask whether a hand knife should perform the task at all

Reject the hand-knife premise when the work cannot be stably supported, the intended path cannot be seen or bounded, the off hand must remain in front of the edge, the exit is toward another person, the material repeatedly traps the blade, or acceptable output requires striking, prying, twisting, or excessive force. The correct intervention may be a fixture, presentation change, workstation redesign, different pattern, powered or guarded process, reduced batch size, or removal of the manual step.

Knife selection sits below elimination and engineering in a real control strategy. A guard, shield, round tip, glove, or training course does not make an irreducibly uncontrolled stroke acceptable.

Confirm the construction is eligible before testing geometry

All four knives are high-carbon steel with hardwood handles and three rivets.

Have the sanitation, quality, food-safety, or other competent program owner decide whether this construction is eligible at the named station. If the written specification excludes carbon steel, hardwood, exposed rivets, or this blade form, stop. Do not conduct a cutting trial to overrule a materials requirement.

9 CFR 417.2 addresses the hazard analysis and HACCP plan; 9 CFR 416.4 addresses sanitary operations for equipment, utensils, and food-contact surfaces. Those citations do not claim every buyer is an FSIS establishment.

Perform the task-hazard analysis at blade-path resolution

Draw the complete travel envelope

Mark where the edge begins, how the handle travels, where the tip or round end travels, where the blade emerges, and how far hand and blade can overrun if resistance disappears. Include the path of a deflected, pinched, or released blade—not just the intended centerline.

Place every hand, arm, leg, torso, coworker route, tote, fixture, and hard surface against that envelope. The off hand stays outside the projected cut path by geometry, not confidence. If the product must be restrained near the path, redesign the support or use a fixture before debating blade style.

Then map the drop zone. The 68300’s round end directly addresses the point-first foot hazard Hyde names. It does not cover the edge, remove the blade’s mass, make the falling knife catchable, or eliminate the need to step back. The 68180, 68090, and 68060 remain pointed.

Identify the source of cutting force

Observe whether the edge slices under a controlled draw or whether the operator compensates with downward pressure, repeated sawing, body lean, a bent wrist, or a sudden breakaway. Extra force may indicate the wrong length, unsuitable material, poor support, a dull or damaged edge, or an unqualified method.

An open handle can provide grip freedom; it also provides no physical stop between a sliding hand and the edge. A guard or shield can interrupt a forward hand slide; it cannot correct a slick handle, dull edge, unstable work, unsafe off-hand placement, or a stroke toward the body. Treat repeated contact with the guard or shield as process evidence. The protection caught a failure; it did not prove the process sound.

Decide whether the point performs named work

List every point-first action separately. “Sometimes useful” and “workers prefer it” are not process requirements. A point earns its place only when the qualified method requires an interior start, controlled pierce, or reach into geometry the round end cannot perform, and that capability cannot be removed by changing presentation or starting from an exposed edge.

Then list everything the point can puncture during normal work, a slip, a pass, a drop, storage, or cleanup. If no named operation needs the point, preserve no puncture capability by default: test the round-tip 68300 if its fourteen-inch length and construction fit the task. If a point is needed, that does not erase its residual hazard; it creates a written exception with controls.

Separate hand-slide protection from puncture protection

These are different hazard classes:

Open 68060/68090: no catalog-stated guard or shield; pointed.

68180: catalog-named “with Guard”; pointed.

68300: Hyde-stated heavy steel shield; round end. The shield addresses fingers and the round end addresses dropped-knife foot puncture in Hyde’s claims.

Do not call 68180 round-tip, call 68300 self-retracting, or call either knife cut-proof. Do not infer that the 68180 uses the 68300’s shield hardware. Guarding a hand and removing a point solve different failures; a selection matrix that collapses them into one “safety” checkbox is not usable.

Include maintenance, sanitation, and storage hazards

Inspect how the knife reaches the station, how it is parked between cuts, who steels or sharpens it, where that work occurs, how the edge is tested, how a dirty knife is transported, and how the clean knife is stored. A well-selected production knife can become the wrong system if it is hidden in a sink, carried loose, sharpened over product, or returned without inspection.

Hyde states that all four blades are ground and honed, and states that the 68300 is semi-hollow ground. It supplies no accepted sharpening angle, abrasive sequence, steeling count, edge-test method, sharpener setting, maintenance interval, cleaning chemical, concentration, contact time, immersion practice, dishwasher instruction, or storage method. The facility’s qualified program owns those values.

Select PPE after the task is understood

OSHA 29 CFR 1910.138 requires employers to select appropriate hand protection from the task, conditions, duration, and identified hazards. The employer’s hazard assessment determines protection for the off hand and whether forearm, torso, foot, eye/face, or other protection belongs at the station; the sanitation program determines how that PPE is cleaned, changed, and kept from contaminating product.

A cut-resistant glove is not a blade stop and does not authorize an off hand in the path. A puncture-resistant need is not automatically answered by cut resistance. PPE that is oversized, damaged, incompatible with the grip, or impossible to keep sanitary creates new hazards. Correct the selection or station; do not ask the worker to compensate.

Use the buyer’s fork

First fork: does policy or the hazard analysis require hand protection in the knife?

Yes: eliminate 68060 and 68090 from the station. They are open patterns with no catalog-stated guard or shield. Continue to the point question between 68180 and 68300.

No: the open pair remains eligible, not selected. Continue to stroke, control, point, force, PPE, sanitation, and trial questions. “No written guard requirement” is not evidence that an open knife is the best control.

Unclear: stop. Have the safety owner resolve the station specification. Purchasing the open knife pending a later decision turns uncertainty into installed exposure.

Choose 68060 when close control is the capability

Choose the open 68060 only when the task hazard analysis permits a pointed unguarded knife and the work is close, visible, wrist-steered, and within one controlled eight-inch draw. Its 8" × 1" × .072" geometry is the exact union’s smallest, shallowest, thinnest option. It fits trimming, small portions, and close contour work at authored pattern altitude.

Its benefit is grip freedom and close control. Its residuals are explicit: no guard or shield; a point; exposed edge during carry, set-down, cleaning, and storage; high-carbon steel and hardwood construction; and no Hyde safety certification. Do not select it for a high-force task merely because the shorter blade feels less intimidating.

Choose 68090 when the open task needs a longer, stiffer plane

Choose the open 68090 only where the same open-pattern eligibility is established and one controlled ten-inch draw, a deeper 1-5/8" blade, and .095" stock solve a real line-holding or crossing problem. It is not simply a “large hand” version of the 68060; length, depth, and gauge all change.

Its benefit is a longer draw and stiffer, deeper plane while retaining open-handle grip freedom. Its residuals are the same open-pattern hazards plus greater reach and a larger travel envelope. If the work needs sustained high force, repeatedly makes the hand run forward, or exceeds one ten-inch draw, do not normalize the failure. Reconsider support, edge condition, the fourteen-inch protected-hand class, or the manual process itself.

Choose 68180 when both the fourteen-inch stroke and the point are required

Choose 68180 only after the specification can answer both questions:

What defined cut requires a fourteen-inch continuous draw?

What defined operation requires a point?

The catalog name establishes a guard; Hyde’s current variant identity establishes Pointed Tip. That makes 68180 the guarded traditional choice where the station needs full-length draw capability and retains point-first work by design.

A guard is not a safety certification and does not make an unsafe point operation approvable by itself.

Choose 68300 when the fourteen-inch stroke is required and the point is not

Choose 68300 when the qualified cut starts from an exposed edge, the work needs a fourteen-inch continuous draw, and the station does not need point-first capability. The round end removes the pierce; it does not remove the cutting edge. Enter with the heel or forward belly and let the edge establish the cut.

This selection has the strongest exact feature claims in the union: Hyde ties the round end to protection of workers’ feet from accidental drops, the heavy steel shield to finger protection, and states a sharp semi-hollow-ground 12-gauge blade. Preserve those claims at their exact grain. Do not expand them into “drop safe,” “cut proof,” “OSHA approved,” or a promise that no puncture is possible from any mechanism.

Residuals remain: a falling or mishandled edge can cut; the blade can lacerate the off hand or coworker; the shield does not cover the edge; a dull, damaged, contaminated, or corroded knife remains unacceptable; the long blade retains a large travel envelope; and the construction still requires sanitation approval. The 68300 is the safer line choice when the point buys no capability—not a universal safe knife.

Choose none of these when the task asks for a missing combination

a short guarded knife or a short round-tip knife;

a stainless blade, sealed synthetic handle, named sanitary certification, or other construction these records do not establish;

a covered, retracting, tethered, disposable, detectable, machine-mounted, or captive blade;

a blade suitable for prying, chopping, striking, bone cutting, skinning, boning, or cutting over a protected underlying layer;

a verified material compatibility, chemical resistance, temperature rating, or food-contact claim absent from the records;

an engineered process that keeps hands entirely outside the hazard rather than another hand knife.

Do not fill a catalog gap with optimistic language. Write the missing requirement, route it to procurement or process engineering, and keep the station on its approved method until a qualified alternative is available.

Trial the candidate without making production the experiment

Define pass, fail, and rollback before issue

Write the trial protocol with the task owner, experienced worker, safety owner, sanitation/quality owner, and maintenance or sharpening owner. Identify the candidate by model key; the current approved knife and method; representative material conditions; trained trial users; quantity or observation window; support and PPE; edge-release condition; acceptable cut result; stop conditions; product disposition; and who can end or approve the trial.

Pass criteria should cover at least:

the intended cut can be completed without prying, twisting, striking, excessive force, uncontrolled re-entry, or placing the off hand in the travel envelope;

the selected point either performs its named work or is absent;

the hand remains securely behind the intended grip/protection;

the worker can maintain a neutral, controlled posture through normal cycles;

the edge, point/round end, guard/shield, handle, and rivets remain intact;

cleaning, sanitizing, drying, inspection, storage, and edge service fit the actual programs;

output quality, foreign-material control, identity, and changeover controls remain acceptable;

no new reach, crowding, handoff, PPE, drop, storage, or maintenance hazard is introduced.

Rollback means returning to the last approved method and controlling affected tools, product, and records. It does not mean telling the next shift to “be more careful.”

Inspect and release each trial knife

Under adequate light, inspect the full edge, point or round end, spine, blade face, handle, rivets, and guard or shield area. Reject or quarantine a knife with a chip, crack, deep roll, bend, active rust, residue, split or loose handle, moving rivet, damaged protection, or uncertain identity. A steel can realign an appropriate rolled edge; it cannot repair missing metal, tighten a handle, remove corrosion uncertainty, or sanitize a dirty assembly.

Use the approved edge test or sacrificial material. Do not use a fingertip, thumb, or improvised paper test over product. The edge should start and draw without crushing, skating, or sudden forceful breakaway. If it does not, route it through the controlled sharpening process before trial.

Prove competency, not attendance

Train on the exact model, task, support, point rule, travel envelope, rest position, handoff prohibition, drop response, edge-exchange route, sanitation transition, inspection, and stop conditions. Demonstrate the normal cut, interrupted cut, knife parking, dirty-tool return, and abnormal-condition stop.

The worker then demonstrates the complete method under qualified observation. Competency means repeatable control and correct decisions, not a signature on a roster. A worker qualified on 68060 is not automatically qualified for the 68180’s fourteen-inch pointed draw; a worker qualified on 68300 is not automatically authorized to introduce point-first work.

Run worst credible normal conditions and stop on abnormality

Include the normal range of material size and firmness, legal product transitions, end-of-shift fatigue exposure where the program allows observation, routine edge exchange, and cleanup handoff. Do not deliberately create a slip, drop, jam, contamination event, or guard strike. Use prior events, safe simulation, and procedural walkthroughs to test the response to those conditions.

Stop the trial on excessive force, repeated contact with the guard/shield, grip loss, material roll, blade pinch, uncontrolled exit, point use outside the written purpose, damaged or dull edge, loose hardware, corrosion, contamination, PPE mismatch, coworker intrusion, or an unplanned method. Hold affected product and tool status under the real program. Do not improvise a fix while the candidate remains in hand.

Inspect the result and the worker, not only cycle output

Look for scalloped or torn faces, crushing, taper, missed lines, excess trim, repeated starts, embedded fragments, and unexplained quality drift. These are clues about length, edge condition, support, material state, or force. Review grip, wrist, shoulder, reach, stance, guard/shield contact, off-hand position, and proximity to others. A knife can improve the cut while worsening exposure, or reduce puncture while increasing exertion; both sides belong in the decision.

Collect worker observations in plain language and verify them against the task: “the shield hits the support before the cut finishes” is actionable; “I dislike it” needs a follow-up observation. Never use worker preference to erase a control requirement, and never use a safety label to erase a real usability failure.

Install the choice under change control

Write the station specification at model-key grain

Record the exact model, catalog pattern, approved task, permitted start method, required support, PPE, inspection, edge-service route, sanitation status, rest/storage location, competency requirement, and explicit prohibited uses. For a pointed selection, state the point’s authorized work. For 68300, state edge-entry only unless a separately qualified method says otherwise. For an open knife, record why the station permits no hand barrier in the knife and what controls that residual.

Do not write “Hyde safety knife” as the complete specification. That phrase loses the 68180/68300 distinction. “68180 / pattern 514 / pointed / with Guard” and “68300 / pattern 314 / round tip / heavy steel shield / semi-hollow” preserve the decision.

Control identity at receiving, issue, and return

Purchasing descriptions, bin labels, shadow boards, issue records, and replacement orders must preserve model key and tip identity. The two fourteen-inch knives may appear as variants of one product on Hyde’s site; the station must not let Pointed Tip and Round Tip become interchangeable during replenishment.

At receiving, confirm identity and inspect the physical knife before release. Segregate trial, approved, dirty, sharpening, quarantine, and rejected status. Do not put an unknown fourteen-inch knife into the round-tip rack because its length matches.

Keep sharpening as its own controlled exposure

Keep knives sharp enough for the qualified method; OSHA’s food-preparation guidance recommends appropriate knives, safe storage and handling, and sharp knives in good condition, while reserving sharpening for trained workers (OSHA food-preparation knife guidance). Sharpness supports lower-force cutting, but sharpening exposes an edge and cannot be treated as casual production work.

The program specifies who may steel or sharpen, the tool and location, PPE, factory-profile preservation, inspection, cleaning/sanitation, and release. Do not assume one recipe for all four knives. Hyde establishes the 68300’s semi-hollow grind and does not establish the 68180’s grind. No universal angle or pass count is authored here.

Close the sanitation and storage loop

Follow the actual sequence for gross-soil removal, cleaning, rinse where required, sanitizing, contact condition, drain/dry, inspection, verification, and release. Keep the knife visible and controlled; never leave it loose in a sink, under product, or soaking without an approved method. Include the blade-handle junction, rivets, and guard/shield area in inspection.

After the required wet process, dry high-carbon steel promptly and completely. Any oil or corrosion inhibitor must be approved for the actual use and controlled under its label and program. A generic carbon-steel care habit cannot override food-contact or sanitation rules.

Store released knives in a controlled rack, sheath, or system that prevents incidental edge contact, preserves model identity, permits inspection, and does not damage the point, round end, guard, shield, handle, or edge. The 68300’s round end does not make loose-drawer storage acceptable.

Verify after installation and after every material change

Schedule observation after initial issue and at intervals defined by the program. Review injuries, near misses, first aid, drops, guard/shield contact, edge damage, corrosion, foreign-material holds, quality drift, sharpening frequency, PPE condition, worker substitutions, and unauthorized knife swaps. Absence of a recorded injury is not by itself proof that the task is controlled.

Reopen the assessment when material size or firmness changes; the cut, fixture, support, layout, line rate, staffing, PPE, sanitation chemistry, sharpener, storage, or supplier changes; a knife fails inspection; a point is used outside its named purpose; a new worker or rotation enters; or any incident or near miss challenges an assumption. Freeze the affected change, return to the last approved state where safe, and repeat the relevant qualification steps.

What goes wrong (and the fix)

“Safety knife” becomes the purchasing description. The buyer receives a pointed 68180 where the station expected a round-tip 68300. Correct the specification, bin, issue record, and receiving check to exact model key and tip identity; quarantine uncertain stock.

The team starts with the catalog instead of the task. Every knife looks plausible, and the loudest preference wins. Return to the station sentence, travel envelope, point requirement, construction eligibility, and residual-hazard record before comparing models.

An open knife is retained because the best cutter prefers it. Preference may reveal a real grip or access need, but it does not close the guard question. Observe the claimed need, test support or process changes, and have the safety owner explicitly decide the residual.

A guard is treated as permission for more force. Repeated guard contact, body lean, or sudden breakaway means the edge, material, support, or method is wrong. Stop, park the knife, and correct the cause. Protection is not a performance target.

The 68180 point has no named job. Replace “just in case” with an edge-entry trial of 68300 if the task needs a fourteen-inch stroke and the construction is eligible. Keep the point only after a defined operation and risk review earn it.

The 68300 is forced to make a point-first start. Stop. Its round end is refusing the requested motion. Re-present the work for edge entry, redesign the fixture or process, or qualify the pointed 68180 if the point is genuinely necessary and acceptable.

The 68060 saws through work wider than its stroke. The knife is being asked to imitate a longer pattern. Test the 68090 when an open pattern remains eligible; if ten inches still cannot complete the controlled draw, assess the protected-hand fourteen-inch class or another process.

The 68090 bridges close contours and removes sound material. The deeper blade is holding a plane where the work needs wrist-steered contour following. Move the close task to 68060 rather than grinding away the evidence.

The round tip reduces puncture risk but the long knife worsens reach or crowding. The line lacks a short round-tip member. Do not keep the 68300 on the strength of one benefit; redesign the station or procure the missing geometry outside this union.

A glove is added after the trial and grip becomes insecure. PPE is part of the qualified configuration. Stop issue, select properly performing protection and sizes under the hazard assessment, then repeat the handling portion of the trial.

The knife cuts well but the sanitation owner rejects the construction. The trial does not overrule the material specification. Reject all four for that station and procure a compliant alternative.

A dull edge is called “safer.” Dullness raises cutting force and breakaway potential. Exchange the knife through the controlled edge-service route. Do not deliberately blunt 68300; Hyde expressly describes it as sharp.

Sharpening happens wherever the knife gets dull. This creates an uncontrolled edge exposure and may contaminate product. Move the knife to the designated sharpening station and require trained service, inspection, sanitation, and release.

A knife drops and a worker tries to catch it. Step away and let it fall. Control nearby product and surfaces, retrieve through the dirty-utensil method, inspect the complete knife, and clean/sanitize/release or reject it under the program. A round tip does not make the edge catchable.

A chip, loose rivet, split handle, or damaged guard/shield appears. Stop, quarantine the knife, hold affected product back to the last confirmed intact inspection, account for missing material, and run the foreign-material and disposition process. Replacement closes neither product exposure nor root cause.

No incidents occur, so the trial is declared successful. Review force, posture, guard/shield contact, near misses, quality, edge life, sanitation, storage, and worker substitutions against the written pass criteria. Zero observed injuries in a small trial is not a safety proof.

A supervisor makes a “temporary” knife substitution. Stop the station if the substitute is outside its approved specification. Temporary work still exposes real hands. Qualify the alternate or return to the approved pattern.

Buyer tests — answer these before ordering

“We do close trimming and small portions; the task assessment permits an open pointed knife.” Start the controlled comparison with 68060. Move to 68090 only if a wider face genuinely outruns one eight-inch draw or needs its deeper, stiffer plane.

“Our work needs a fourteen-inch draw and a point-first start we can name.” Assess 68180: pointed and catalog-named “with Guard.” Document the point operation and preserve all residual puncture controls.

“Our work needs a fourteen-inch draw, but every cut can begin at an exposed edge.” Assess 68300: round tip, Hyde-stated heavy steel shield, and semi-hollow grind. Do not retain a point without a job.

“We want the safest knife.” That is not a complete request. Identify the task, construction gate, hand-slide risk, puncture need, stroke, off-hand path, drop zone, PPE, sanitation, maintenance, and abnormal work. The result may be 68300, another Hyde member, a tool outside the union, or no hand knife.

“Our policy requires a guard, but the work is close and needs an eight-inch blade.” None of the exact four combines short length with a catalog-stated guard. Reject the union for that requirement.

“Our policy prohibits points, but the work needs only a ten-inch stroke.” None of the exact four combines a ten-inch blade with a round tip. Do not oversize automatically to 68300; assess station geometry and procure the correct short round-tip solution elsewhere.

“Our food-contact standard requires stainless and a sealed synthetic handle.” None of the four has that accepted construction claim. Reject the union for the station.

“Can the 68180’s guard and 68300’s shield be treated as the same?” No.

“Can the 68300 be advertised or approved as injury-proof?” No. Exact claims are limited to the round end protecting workers’ feet from accidental drops and the heavy steel shield protecting fingers. The exposed sharp edge and other residual hazards remain.

“Can one pattern cover normal cuts, jam clearing, and sharpening?” No. Qualify each task separately. Jam clearing may require isolation and another tool; sharpening is a separately controlled exposure.

The broad American butcher knife is an old trade pattern without a documented single inventor. Hyde’s defensible place is not invention; it is continuity—an industrial blade maker in the same Massachusetts cutlery ecosystem still listing butcher patterns by number, length, and gauge.

The open 508 and 510 preserve the personal-tool logic: trained hand, free grip, sharp carbon edge, steel and stone. The 514 and 314 record the later plant-program logic: first put a barrier between hand and edge, then remove the point where the process does not need it.

Exact accepted claims used are limited to identity, dimensions, gauge headings, family steel/edge/handle construction, 68180 “with Guard” and Pointed Tip identity, and 68300 Round Tip plus Hyde’s round-end, heavy-steel-shield, sharp, and semi-hollow statements.
