How to Trim and Portion Meat

This guide begins with an already slaughtered, inspected or otherwise lawfully sourced, chilled cut and ends with trimmed pieces and portions that meet a written specification. It does not teach slaughter, carcass dressing, primal breakdown, disease disposition, skinning, boning an entire carcass, or sawing bone.

There is no honest universal pace. A production standard belongs to the establishment’s validated process and work study; a first-time cutter should work one piece at a time and stop whenever anatomy, product condition, or disposition is uncertain.

Difficulty: control and judgment rather than force. Trimming asks the edge to follow a boundary without entering the lean beneath it. Portioning asks the blade to return to the same plane and reference face every cut. More pressure usually means a dull edge, unstable product, the wrong knife, or a cut that belongs upstream at the breaking bench.

Everything else the station needs: the current cut sheet, customer specification, or applicable USDA AMS Institutional Meat Purchase Specification · a released food-contact cutting surface that does not rock or slide · separate, identified containers for finished portions, saleable trim, rework, and inedible or held material · a verified scale and any approved thickness gauge, template, or portioning aid required by the operation · labels and lot-control materials · released cold storage · a designated knife rest and a separate edge-maintenance station · the hand, forearm, torso, and foot protection selected by the employer’s task-specific hazard assessment · the establishment’s cleaning and sanitation system. The two Hyde knives do not replace any of those controls.

Before you start: keep this job distinct from breaking

Start with a piece that is already ready for the trim bench. The incoming work may be a boneless subprimal, roast, loin, muscle, fillet, or other identified cut. It should not require whole-carcass anatomy, hide removal, evisceration, carcass splitting, or a sequence of primal separations. Its defining motions are shave, lift, tension, square, measure, draw, verify.

the incoming item and lot;

the named outgoing item or portion;

which external fat, seam fat, silverskin, exposed connective tissue, glands, bruising, blood spots, ragged edges, or other defects must be removed;

which of those materials must remain;

the required portion thickness, weight, shape, orientation, count, and workmanship;

the allowed trim, rework, and inedible streams;

the verification frequency and the person authorized to release or disposition a miss.

“Trim it clean” is not enough. One buyer may require a close-trimmed muscle; another may buy the same item with a defined fat cover. Silverskin that is objectionable on a medallion may be outside the purchased surface on another cut. USDA AMS IMPS turns fat, weight, thickness, shape, and workmanship into purchaser-defined requirements; the plant cut sheet translates those requirements into the station’s actual target. This guide teaches the hand method. It does not invent the target.

FSIS states that meat sold commercially must be inspected and passed under the Federal Meat Inspection Act (FSIS — Inspection of Meat Products). A cutter may be trained to identify routine removable defects and route them under the cut sheet. A cutter may not decide that an unfamiliar lesion, contamination event, off condition, or identity problem is safe because it can be cut away. Stop, identify the affected lot, hold the product, and call the authorized lead or inspection personnel. Smell, color, a clean-looking cut face, or extra trimming is not a release decision.

Release the bench under the written sanitation program. “Looks clean” is not the standard. At an official establishment, food-contact surfaces and utensils must be cleaned and sanitized as often as necessary to prevent insanitary conditions or adulteration (9 CFR 416.4), and the establishment implements and monitors its Sanitation SOP procedures (9 CFR 416.13). The knife, cutting surface, scale platform, gauges, trays, knife rest, and any steel that can contact the blade belong inside that release. Follow the approved chemical label and SSOP for sequence, concentration, contact, rinse, verification, and drying. This page supplies none of those numbers because they are chemical- and program-specific.

Inspect each knife as a food-contact utensil and as a cutting tool. Under good light, check:

the edge for chips, flat spots, rolls, cracks, and embedded debris;

the blade faces and spine for active rust, pits, residue, or an unaccounted scratch that could be a crack;

all three rivets for movement or proud edges;

the hardwood scales for splits, looseness, trapped residue, rough fibers, or damage that prevents effective cleaning;

the junction between blade and handle for soil or movement;

the handle for a dry, secure grip.

A steel may realign a rolled edge. It cannot replace missing metal, close a handle split, tighten a loose rivet, or make a pitted food-contact surface acceptable. Remove a damaged knife from service. If any blade, rivet, or handle material may be missing, hold product back to the last verified-good inspection and use the establishment’s foreign-material procedure. FSIS’s current foreign-material directive treats metal, wood, and other non-animal objects as hazards that establishments must detect, segregate, and disposition under their food-safety systems; “we probably found the whole chip” is not a release criterion.

Verify that the traditional carbon-and-hardwood build is permitted at this station. The Hyde catalog documents high-carbon steel and a triple-riveted hardwood handle. It does not certify either knife to a named USDA, NSF, or facility food-contact standard. Buying a knife does not amend either program.

Dress for the knife path the task actually creates. OSHA requires employers to select hand protection from the hazards, task, conditions, and duration (29 CFR 1910.138); OSHA’s meatpacking hazards resource routes knife work through the facility’s PPE and safe-work controls. For trimming, the non-knife hand often tensions a flap close to the edge. For portioning, it stabilizes product behind a cut that can travel through and beyond the far face. The employer’s hazard assessment therefore owns the cut-resistant hand, forearm, torso, and foot protection, along with sanitation barriers and change-out rules. Do not turn “wear a mesh glove” into a universal prescription: fit, coverage, dexterity, construction, and cleanability are station decisions. PPE reduces consequence; it does not make a stroke toward the off hand acceptable.

Lay out a one-way product and knife flow. Put incoming product on the side that lets the knife hand work without crossing finished trays. Place saleable portions, saleable trim, rework, and inedible or held material in distinct, identified locations. Keep the scale beyond the blade’s travel. Give the knife one designated rest where it lies flat, visible, and edge away from all reach paths. Keep dirty-utensil control outside the released-product path. The bench should make the wrong motion awkward: no carrying an exposed knife over finished portions, no reaching across the edge to find the scale, no guessing which trim tub is which.

Choose between the 68060 and 68090

Let the motion choose the blade.

Choose 68060 for trimming. Its 8-inch, 1-inch-deep, .072-inch blade is the line’s close-work geometry. The shallow blade works inside concave surfaces without bridging high spots; the lighter section follows controlled wrist movements; the shorter edge is easy to keep visible while the off hand tensions a thin strip. This is the primary knife for surface-fat shaving, silverskin removal, cleaning edges, squaring small pieces, and cutting smaller boneless portions.

Choose 68090 for a larger portion face or broad, straight trim plane. Its 10-inch edge gives a longer uninterrupted draw, while the deeper, thicker blade holds a plane through a large piece that could steer the 68060. It is the honest choice when one full 68060 draw cannot cross the face, or when a broad cut must remain square. Its depth is a disadvantage in tight hollows: do not carry it into close silverskin work merely because it feels more substantial.

This exact guide does not add a guarded SKU to make the graph look complete.

Use the one-draw test before committing a larger piece. Hold the selected knife above the intended portion face without touching product. If the edge cannot enter at the near side, travel through the face, and clear the far side in one controlled draw without the handle, knuckles, or point entering an unsafe path, the stroke and knife do not match the work. If the 68090 still requires saw-like re-entry, the work has reached the upstream breaking or long-stroke-slicing boundary. Do not stretch this guide by teaching a short knife to imitate a longer one.

Prove the edge without touching it. Use a released piece of sacrificial trim or the facility’s approved edge-check method. A suitable edge starts without a shove, draws cleanly, and leaves a smooth face. Compression followed by a jump, tearing, or a shiny uncut strip means the edge is not ready or the selected knife is wrong for the product condition. Never thumb the edge. Sharpening itself is a separate, higher-risk transition: NIOSH-associated research on pork-processing lacerations found increased risk around sharpening tools, equipment malfunction, unusual methods, and unusual tasks (CDC/NIOSH record). Use the trained method and designated station; do not improvise an angle, abrasive, machine, or sharpening schedule from this page.

Trim external fat without planing away lean

Stabilize the piece on its broadest natural face. A trimming cut is precise only if the work stays still. Rotate the piece until it rests without rocking. If the target surface faces down, use a clean, approved support or divide the work into a stable sequence rather than holding a rounded piece upright with the off hand. Keep the surface being trimmed fully visible. The knife must never disappear behind the product toward hidden fingers.

Read the layer before cutting it. External fat is not uniform. Identify the visible fat surface, the lean boundary, seams where fat dives between muscles, and any specification-required fat cover that must remain. Use the cut sheet’s measurement or workmanship instruction at the required locations. Do not infer a universal “clean” surface. A glossy red face can be over-trimmed; a deliberate fat cover can be correct.

Start with a shallow opening cut directed away from the off hand. With the 68060, set the heel or middle of the edge under a free fat edge, blade nearly parallel to the lean surface. If no edge exists, create only the smallest visible tab the procedure permits, with the point traveling into open space and away from every hand and body part. Do not stab blindly beneath the fat. The purpose of the opening is to create something the off hand can tension and a plane the eye can see.

Let tension expose the boundary. Grip the fat tab with the protected off hand or approved holding aid and pull it gently away from the lean, across and away from the knife path, not directly toward the body. Tension turns the boundary from a hidden interface into a visible line. Keep the knife almost flat and draw in short, controlled outward strokes. The edge should shave at the boundary while the lifted strip peels away. If the lean begins to dome up with the fat, lower the tension and flatten the blade; if the edge dives red, stop and reset the plane.

Use long shaving strokes only on a broad, declared plane. Where the specification calls for reducing an even external cover across a large flat piece, the 68090 can earn its longer, stiffer blade. Lay the edge shallow, begin on a visible boundary, and draw along the surface so the full edge shares the cut. Do not press straight down. The moment the surface curves into a hollow, switch back to the 68060 or rotate the work; the deeper 68090 bridges a hollow and takes the high lean with it.

Trim in passes, verifying between them. A thick removal strip may be efficient, but the last pass should be thin enough that the specification—not momentum—decides when to stop. Set the knife down before measuring or weighing. Check the fat cover at the locations and frequency the cut sheet requires. Never hold a knife while reaching for a ruler, probe, or scale control, and never use the knife spine as an unapproved gauge.

Keep yield visible. Drop saleable fat or lean trim into its named stream as it comes off; put inedible material in the distinct inedible container; route uncertain material to hold. Do not build one anonymous pile and sort it from memory later. If saleable lean repeatedly appears in the fat stream, the station is over-trimming, the blade angle is too steep, or the wrong knife is on the work. The pile is process evidence.

Lift silverskin and exposed connective tissue

Confirm the membrane is actually meant to come off. “Silverskin” is used loosely for several connective surfaces. The purchased item or further process may require removal of a tough exposed membrane, may tolerate it, or may depend on leaving another connective layer intact. Follow the cut sheet and station training. This guide does not decide which anatomy a product specification names.

Open a window, not a trench. Lay the 68060 shallow against the muscle and use the forward portion of the edge to make a small opening under one end of the membrane. Direct the edge away from the off hand and keep the point visible. The opening should separate membrane from lean without excavating a channel of meat. If the membrane will not lift cleanly, move to a naturally released edge rather than probing deeper.

Turn the edge toward the membrane, not the meat. Once a tab is available, tension it upward and slightly away with the protected off hand. Slide the blade under it almost parallel to the muscle, with the cutting edge biased subtly upward into the membrane. Draw outward while the membrane travels over or just above the blade. The bias matters: edge down carves a red trough; edge slightly up leaves a thin haze of lean at most and puts the expendable membrane in the path of the cut.

Use the 68060 in visible increments. Advance only as far as the boundary remains visible. Regrip the tab, restore light tension, then draw again. A long heroic pull is not mastery when the membrane changes direction beneath it. The eight-inch knife’s value here is steering: the wrist can correct to the muscle contour before the edge has traveled far enough to waste lean.

Do not chase every white strand into the muscle. Exposed connective tissue called out by the specification can be lifted and shaved. Connective seams buried between saleable muscles may belong to the product or to a different fabrication step. Digging after a strand that disappears into the lean converts trim into gouge and destroys the portion face. Stop at the specification’s visible boundary.

Handle glands, bruise, clots, bone fragments, and unfamiliar defects under the station rule. Routine trained removals should be made with short outward strokes, keeping affected material controlled and separated. An unfamiliar lesion, fecal or ingesta concern, chemical contamination, foreign material, unexplained off condition, or product whose acceptable disposition is unclear is not a “trim a little wider” problem. FSIS describes meat or poultry prepared or held under insanitary conditions, or containing injurious or unwholesome material, as adulterated (FSIS — Product Contamination); a clean-looking remainder does not by itself prove a lawful disposition.

Square, measure, and portion

Choose the portion orientation before truing the first face. Identify grain direction, natural shape, and the cut sheet’s required orientation. Portioning across the wrong axis cannot be corrected by making the slices more even. Place the piece so its broadest stable surface rests on the board and the intended cut plane is visible from heel to point. If the piece rolls, rotate or support it with approved food-contact equipment rather than gripping tighter near the path.

True one reference face—and remove no more than needed to establish it. Use the 68060 on a smaller piece or the 68090 on a larger face. Hold the blade vertical to the board and draw through once. The goal is a square plane from which every subsequent thickness is measured, not a cosmetically perfect end at the cost of yield. Route the trued end under the trim plan; do not silently treat it as waste.

Mark or gauge from the same reference every time. Use the plant’s approved gauge, guide, scale, template, or marking procedure. Put the knife in its rest before placing or adjusting the aid. If a physical guide stays near the cut, it must be approved for food contact and positioned so the knife cannot strike it or drive it into the off hand. Eyeballing is not a substitute for a specified tolerance.

Place the off hand behind the cut plane. Stabilize the uncut body of the piece, fingers together and clear of the far-side exit. Never hook fingertips under the piece where the point can emerge. Do not use the off hand to catch the portion as it separates. Let the cut piece fall or slide into a clear area, set the knife down, then move it.

Draw; do not press or saw. Set the heel at the near upper edge of the marked plane, keep the blade square, and draw the full edge through in one continuous stroke. The sliding edge does the cutting. Straight downward pressure compresses the portion before it separates, distorting thickness; repeated short strokes leave a scalloped face and invite the blade to re-enter on a different plane.

Use 68060 where control is the work. For a smaller boneless portion whose face fits within one eight-inch draw, the 68060 gives the best view of the plane and the least excess blade beyond the far side. Its shallow depth also makes small corrections legible in the hand. It is not a license to saw through a larger piece: when the face outruns it, move up.

Use 68090 where the face needs stroke and line-holding. On a large boneless roast, broad loin, or other portion face that one 68060 draw cannot cross, the 68090’s ten-inch edge and stiffer, deeper blade reduce re-entry and hold the face square. Let the longer edge travel. Do not turn its extra mass into a chopping stroke, and do not use it to cross solid bone.

Verify the first portions before producing a stack. Check weight, thickness, shape, face quality, and trim against the cut sheet at the required frequency. A scale reading is part of the decision, not a score after the knife work is over. If the first portion misses, correct the reference, gauge, stance, or knife before repeating the error through the batch.

Treat a miss as product with a disposition, not as something to hide in the next cut. Do not make the next portion deliberately heavy to “average out” a light one unless the written system explicitly controls an average-weight product that way. Do not shave a miss repeatedly until it becomes unidentifiable. Segregate it into the approved rework, alternate-product, or hold stream; record or communicate the deviation as required. Traceability is preserved by naming the miss while its identity is still obvious.

Keep the blade face clean enough to read the cut. Fat and protein film can obscure chips, rust, and soil and can make the handle or blade slick. Use the station’s approved wipe/change/cleaning method; do not wipe the edge on an apron, cardboard, an unapproved rag, or the cutting surface’s dirty side. If cleaning requires leaving the released station, exchange the knife through dirty-utensil control and use a released replacement.

Knife and product control during the run

Stop the edge whenever the work changes. A coworker enters the stroke envelope; the product rolls; the off hand loses its hold; a gauge shifts; the handle turns slick; the knife meets unexpected bone; the blade begins to tear; the anatomy is unfamiliar; the task changes from ordinary trim to something the cutter was not trained to do. In each case, put the knife flat in its rest and reset or escalate. NIOSH’s laceration research found unusual tasks and unusual methods among the elevated-risk conditions. “Finish this stroke” is not a control.

Never catch, carry, or hide a falling knife. Step back and let it fall. A dropped 68060 or 68090 remains pointed and exposed; neither has a guard or a catalog-stated drop-protection feature. Once down, the knife is a dirty utensil. Control the nearby product, retrieve the knife under the station procedure, and return it only after the required inspection, cleaning, sanitation, and release.

Account for any damage immediately. If the edge chips, a rivet loosens, the handle splinters, or the knife strikes metal, bone-cutting equipment, a gauge, or the floor, stop and identify product back to the last confirmed intact inspection. Locate and account for missing material, use the most sensitive approved detection or sorting method the plan requires, document the incident, and let the authorized food-safety system decide disposition. Do not grind a damaged edge at the bench and resume over the same product.

Maintain separation between incompatible operations. Raw meat is not one universal sanitation state. Species changes, allergen or added-ingredient work, edible-to-inedible contact, raw-to-ready-to-eat transitions, and a contamination event may require separate tools, changeovers, or product holds. The SSOP and HACCP plan own the trigger and method. Color-coding, dedicated knives, and scheduled changeovers are useful only when they match the written program; this guide does not invent a universal scheme.

Keep product under the establishment’s process control. Work in batches sized to the released process; return finished portions and unused product according to the facility plan. This page does not state a universal product temperature, exposure time, room limit, or discard clock. Those numbers differ by product, process, jurisdiction, and validated plan. If a monitored limit is exceeded or its record is missing, hold product and follow the corrective-action and disposition procedure. Sensory judgment does not replace the record.

After the batch

Inspect the output before cleanup erases the evidence. Under good light, compare portions against the cut sheet:

reference faces square and cut faces smooth rather than scalloped;

required fat and connective tissue removed, required cover retained;

no avoidable gouges, feathered tails, ragged edges, embedded fragments, or surface contamination;

every piece and trim stream still carrying correct identity and lot control.

Sample and record at the plan’s required frequency. If a defect suggests a systemic setup problem—every portion leaning, every piece over-trimmed, recurring bone strikes—hold the affected run back to the last acceptable check and correct the process before release.

Reconcile yield by named stream. Weigh or count finished portions, saleable lean trim, saleable fat where applicable, rework, inedible material, and held product to the extent the operation requires. Yield is not merely an accounting result; it diagnoses the hand method. Lean in the fat stream means the blade is too steep or the cutter is chasing appearance. Excess rework means reference or verification drift. Unexplained loss means identity broke somewhere on the bench.

Disposition belongs to the authorized program. Release conforming product through the normal control. Segregate and label nonconforming portions, suspect contamination, foreign-material exposure, unidentified trim, and product affected by a process deviation.

Clean and sanitize in the written sequence. Remove and protect product; control gross debris; clean; rinse where the chemical system requires; sanitize with the approved agent under its label; complete the required drain, dry, inspection, verification, and record steps. Include the knife rest, board seams, scale platform, guides, tote contact surfaces, and the handle/blade junction—places that a fast wipe misses. No universal water temperature, chemical strength, dwell time, or immersion procedure is stated here.

Dry the high-carbon blade promptly after the required sanitation step. Water left on high-carbon steel creates rust. Once the facility’s cleaning and sanitation procedure is complete, dry the knife fully and store it in the protected clean rack, controlled scabbard, or issue system the establishment specifies. Do not leave it soaking, loose in a drawer, buried in a sink, or edge-to-edge with other tools.

Steel or sharpen only under the maintenance program. Steeling realigns a rolled edge; sharpening removes metal to restore an edge that steeling no longer recovers. The distinction is useful, but it is not a complete sharpening procedure. This guide invents none.

What goes wrong (and the fix)

The silverskin tears into short tabs. Tension is inconsistent, the edge is dull, or the blade is cutting down into muscle rather than slightly up toward the membrane. Stop, restore a clean tab, lower the blade nearly parallel to the lean, bias the edge toward the expendable membrane, and work in visible increments with the 68060.

Red lean is leaving with the fat. The blade angle is too steep, the off hand is lifting muscle with the fat, or the cutter is removing to appearance instead of the fat specification. Flatten the edge, reduce tension, shave a thinner pass, and verify before continuing. Route the removed lean to its approved saleable stream; do not hide the yield loss in inedible trim.

The trimmed face is gouged and terraced. The work rocked, the knife bridged a hollow, or long strokes continued after the contour changed. Put the piece on a stable face, switch from 68090 to 68060 in the hollow, shorten the stroke, and rotate the product so the boundary remains visible. Do not “level” the gouge by removing sound lean around it.

Fat smears instead of peeling. The edge is not cutting cleanly, the product condition is outside the process target, or excess downward pressure is warming and deforming the surface. Stop and use the facility’s edge and product-condition controls. More force produces a slicker handle and a worse plane.

The portion compresses, then springs into the wrong thickness. The cutter pushed downward instead of drawing, or the product was not supported on a stable face. Reset the broad face on the board, keep the blade vertical, and make a full sliding draw. Verify the next piece before continuing.

The cut face is scalloped. The blade was too short for the face or the edge was dull enough to require re-entry. Move from 68060 to 68090 when one ten-inch draw solves the crossing.

Portions get progressively thicker, thinner, or wedge-shaped. The station stopped returning to one reference face, the gauge moved, the blade leaned, or verification came too late. Re-establish a minimal square reference, secure or replace the approved gauge, correct stance and blade plane, and hold output back to the last conforming check.

The first portions are correct but the batch drifts. Edge condition, product shape, operator posture, or measurement rhythm changed. Inspect the knife, reset the bench, and increase verification according to the plant procedure until control is demonstrated. Do not average a drifting run into compliance.

The point emerges near the off hand. The fingers were hooked under the work or placed on the far-side exit. Reorient the piece, place the off hand behind the cut plane, and let the portion fall free. A glove is not permission to leave flesh in the exit path.

The handle turns slick. Put the knife in the designated rest immediately. Exchange or clean contaminated PPE, clean and dry the handle under the SSOP, and resume only after a secure grip is restored.

The edge keeps meeting bone or hard foreign material. The anatomy or incoming product differs from expectation, the cut line belongs to a saw operation, or contamination is present. Stop; do not twist, pry, hammer, or chop. Inspect the knife, hold affected product, identify the object or structure, and bring in the authorized lead.

A chip, splinter, or loose rivet is discovered after several pieces. Freeze the line, identify the last verified-good knife inspection, hold all potentially affected product, and execute the foreign-material detection and disposition procedure. Replacing the knife closes the equipment problem; it does not close the product investigation.

The knife shows rust after sanitation. The blade remained wet, the storage system trapped moisture, or the chemical procedure is incompatible with the tool. Remove it from food-contact service for inspection; do not polish active rust over released product. Correct drying and storage under the SSOP and ask the facility to determine whether the traditional carbon-steel tool remains acceptable.

Finished trim has an unfamiliar odor, color, lesion, or contaminant. Do not taste it, rinse it, trim wider, blend it into grind, or declare it safe. Sensory observations trigger review; they do not decide disposition.

Sanitizer or cleaning residue remains on the station. Stop production, protect or hold exposed product, and follow the chemical label and SSOP corrective procedure. Adding an improvised rinse can be as wrong as skipping one; the approved system owns whether rinsing is required.

There are three different decisions at this bench, and confusing them creates both waste and risk:

Workmanship acceptance: Does the portion meet the purchaser’s fat, weight, thickness, shape, and finish specification? The cut sheet and its designated checker decide. A miss may be reworked or routed to another lawful product under the program.

Tool release: Is the knife intact, cleanable, clean, sanitary, sharp enough for controlled work, and permitted by the station specification? The maintenance, sanitation, and safety programs decide. A knife can be rejected even when its edge still cuts.

Food-safety or inspection disposition: Is suspect, contaminated, unidentified, or foreign-material-exposed product releasable, reconditionable, condemnable, or disposable? A cutter does not convert that decision into “trim until it looks good.”

Discard is therefore never casual and never cosmetic. Saleable lean should not be discarded because the cut was poor; it should be captured in the correct trim or rework stream. Conversely, product under a contamination or identity hold must not be rescued by yield pressure. Segregate, label, document, and let the authorized process decide.

Where this job ends — honest scope

This guide covers the common bench mechanics of trimming and portioning: read the specification, release and lay out the station, select between the 68060 and 68090, shave external fat without planing lean, tension and lift silverskin, establish a square reference face, make measured full-edge draws, verify output, preserve identity, and stop on tool, sanitation, safety, or inspection uncertainty.

It is not a species-specific cutting atlas. Beef, pork, lamb, veal, goat, game, fish, and poultry have different anatomy, named cuts, defects, inspection systems, and portion specifications. It is not a slaughter or carcass-dressing guide.
