How to Process Game in Quantity — Intake, Break, Trim, Pack, and Keep Every Animal Separate

Hyde verifies their identity, construction, and dimensions, but claims no application for either knife. This guide states no price or availability: both are dynamic checkout facts and must be read live on the linked product pages.

Job: receive a lawful, identified game-animal carcass, quarter, or boneless lot into a processor’s controlled intake; keep that animal separate; move accepted material through breaking, boning, trimming, portioning, grinding where ordered, packaging, and cold storage; and return only that customer’s identified product.

Time: no universal “hours per deer” or “animals per shift” claim is defensible. Species, carcass state, animal size, customer cut sheet, testing hold, boning method, grinder order, packaging system, staffing, inspection frequency, and cold-room capacity control throughput. A processor sets capacity from the slowest controlled step, not from the speed of the breaking knife.

Difficulty: production control first, knife work second. The difficult parts are intake acceptance, one-animal identity, disease and contamination stops, task separation, edge control through a long batch, and returning every output to the right lot. Strength is not a qualification. When a draw needs force, the edge, product state, work support, tool choice, or method is wrong.

The exact tools from this catalog:

It is pointed and open-handled. No accepted Hyde claim gives it a guard, drop-protection feature, food-contact certification, or game-processing application.

The boundary: this guide begins at intake, not at the shot

Know exactly what this page does not teach

This is a processing guide, not a hunting guide. It gives no instruction on finding, selecting, shooting, dispatching, tracking, bleeding, field dressing, eviscerating, or transporting a live or newly harvested animal. It does not tell anyone where to place a projectile or how to make a kill.

The first action here is the processor receiving an already harvested carcass, quarter, or boneless lot at a controlled facility boundary.

Separate private-use processing from meat offered for sale or service

“Game processing” is not one regulatory category. A processor handling an owner’s lawfully harvested animal for that owner may sit in a different state/custom-processing lane from a business producing game meat for sale, donation, restaurant service, or interstate commerce.

For retail sale or service, the FDA’s current 2022 Food Code §3-201.17 is the model-code starting point: game animals must enter through the applicable commercial, voluntary-inspection, routine-inspection, or legally allowed field-dressed inspection pathway. FDA also explains that non-amenable game meats offered commercially remain subject to FDA requirements and may use USDA voluntary inspection where available (FDA-regulated meats and meat products). The Food Code is a model adopted differently by jurisdictions; it is not proof that a particular state has adopted the same text.

At intake, record which legal lane applies and which agency has jurisdiction. If the lot’s intended use changes—from owner return to donation, sale, restaurant use, or another distribution—the lot does not simply follow the new label.

Intake one animal as one controlled lot

Assign a unique lot number before the animal crosses into production. Tie that number to the customer/owner, species, origin or management zone where required, harvest or possession documentation, date/time received, carcass form, observed condition, requested cuts, requested testing, and every container or part accepted.

Keep the identity physically attached through receiving, cooler, breaking rack, trim tubs, grinder staging, packaging, freezer, and pickup. “The two deer beside each other belong to the same family” is not lot control. Neither is memory, antler size, bag color, or a name written only on the intake ticket.

For cervids, individual control also carries a disease reason. CDC advises customers using commercial processing to consider having their animal processed individually, and advises that meat from a CWD-positive animal not be eaten (CDC — Chronic Wasting Disease). Pooling before a result can turn one animal’s status into every customer’s problem.

Record the cold-chain condition; do not reconstruct it

Measure and record the condition required by the facility intake plan: product temperature at the defined location, whether surfaces are chilled or frozen, evidence of thaw/refreeze, time information supplied by the customer, container condition, and the state of exposed tissues. Do not write a cooling history the processor did not witness. “Felt cold,” outdoor weather, or ice in the vehicle is not a continuous record.

A custom or official processor follows the receiving and process limits in its own applicable law and validated plan. This guide does not convert the FDA model value into a universal carcass-cooling schedule, nor does it invent a maximum transport time, hanging time, cooler air setting, product-core target, or discard clock.

If the measured condition or history falls outside the receiving plan, place the lot on hold. Do not “get it cold now” and erase the deviation. The authorized food-safety owner decides acceptance, testing, diversion, return, condemnation, or disposal under the actual program.

Inspect for condition, contamination, and missing information

Under strong light, inspect the container and exposed carcass or meat surfaces without turning the intake dock into a butchering station.

fecal, ingesta, soil, hair, leaf litter, insects, dirty water, fuel, chemical, or other visible contamination;

projectile path damage, bruising, hematoma, bone splinters, shot, arrow/broadhead fragments, metal, plastic, glass, or other foreign material;

abnormal odor, color, gas, slime, mold, decomposition, or drying inconsistent with the declared handling;

abscesses, enlarged or unusual tissue, parasites, lesions, or other signs the receiving employee is not authorized to diagnose;

missing tag/permit/identity, mixed parts that cannot be assigned to one animal, or a species/origin conflict;

damaged packaging, leaking fluids, and surfaces that contaminated the vehicle, dock, or another lot.

Visual inspection is a stop trigger, not a declaration of safety. Some hazards are invisible; some normal postmortem changes look alarming to an untrained eye. Do not rinse away evidence, trim an unknown lesion into the waste barrel, or hide projectile damage inside the grind stream.

Run the CWD fork before cervid meat enters shared equipment

CDC’s boundary is direct:

do not handle or eat animals that looked sick or acted strangely, and do not eat meat from animals found dead;

wear gloves when handling cervid meat and avoid handling brain and spinal tissues;

strongly consider testing deer or elk where CWD is active;

have a commercial processor keep the animal individual;

do not eat meat from an animal that tests positive.

Keep the carcass/lot and all packages identifiable until the result and disposition are closed. Avoid cutting through brain, spinal cord, and other high-risk tissues under the jurisdiction’s processor guidance; use separate tools or routes if the written program requires them.

If a result returns positive, do not release the meat for consumption. The knife operator does not salvage “clean-looking” muscles from a positive animal.

Run species-specific zoonotic and public-health forks

Game is not interchangeable raw material.

Feral swine and other Brucella hosts: CDC identifies hunters, butchers, and others handling animal tissues as higher-risk groups; current CDC guidance calls for rubber gloves, eye protection, protective clothing, and task-appropriate masks/respirators when working with animal tissues (CDC — Brucellosis and animals). Freezing, smoking, drying, and pickling do not reliably eliminate Brucella. A splash to eyes, mouth, broken skin, or an unprotected cut is an exposure event, not a handwashing footnote.

Bear, wild boar, and other Trichinella-risk species: CDC warns that freezing wild game may not kill all Trichinella because some worms are freeze-resistant; curing, drying, smoking, or microwaving alone is also not a dependable kill step (CDC — Preventing Trichinellosis).

Rabbits, hares, rodents, and other tularemia hosts: CDC recommends gloves when handling these animals and notes infection can follow skin contact with infected tissue (CDC — Preventing Tularemia). Unexpected illness, die-off context, lesions, a puncture through PPE, or splash exposure goes to the public-health/occupational-exposure procedure.

The facility’s hazard assessment converts these species facts into receiving restrictions, PPE, exposure response, cleaning, testing, and acceptance rules. “Game” on a work order is not enough identification to do that.

Decide whether the two Hyde knives are allowed at this station

Both registered knives are traditional high-carbon steel triple-riveted to hardwood. Hyde’s accepted records do not certify them to a named USDA, FDA, NSF, food-contact, dishwasher, sanitizer-compatibility, immersion, or occupational-safety standard. Many inspected or audited facilities specify stainless blades, sealed synthetic handles, guards, or other construction at food-contact stations. If the written knife specification prohibits carbon steel, hardwood, exposed rivets, pointed open handles, or these exact models, neither 68060 nor 68090 belongs in production.

Approval is made before purchase or issue, not after a pallet of knives arrives. Catalog identity proves what the tool is; it does not grant facility acceptance.

Build the batch as separate tasks, not one person and one knife

Map the complete lot route before cutting

The disciplined flow is:

Receive and hold — documentation, identity, condition, cold-chain record, disease/test fork, acceptance decision.

Hide/skin task, if still required — separate station and skinner; outside this guide’s doing steps.

Evisceration/carcass-dressing task, if still required — separate trained operation; outside this guide.

Break quarters and large boneless pieces — 68090 where an open pointed butcher knife is approved.

Bone — a narrow boning knife following bone; not either registered Hyde knife.

Trim and portion — 68060 for contours and smaller pieces; 68090 only where a larger boneless face needs one clean draw.

Grind, if ordered — inspected trim through controlled grinder setup; no pooled animals unless the customer and law expressly allow it and identity remains lawful.

Package, label, freeze/chill, reconcile, and release — packaging and cold-storage systems, not the butcher knives.

Every arrow between those tasks is a transfer with identity, contamination status, tools, and a released next station. One knife carried from hide to clean trim without a validated changeover does not simplify the operation; it carries the dirtiest task forward.

Write the customer cut sheet before the first separation

The cut order should state the accepted species and lot, package names, bone-in/boneless choices, roast/steak/trim/grind allocations, package sizes or counts, organ disposition, test hold, and any customer-supplied ingredients or packaging. The facility adds the product specifications and legal labels it must control.

Do not ask the cutter to remember a conversation at the dock. Do not discover at packaging that “all grind” meant “save the backstraps.” When an instruction is ambiguous, park the knife and resolve the document. The right cut made against the wrong order is still a total failure.

Size the batch to the cooler, grinder, and packaging capacity

Release only the animals and parts the downstream stations can keep identified and within the cold-chain plan. A fast breaking table can overload a slow boning or packaging station in minutes. Product stacked in unlabeled tubs while the next station catches up is not throughput; it is lost control.

Use visible lane status—received, held, released to break, boning, trim, grind, packaged, freezer, CWD/result hold, nonconforming hold, completed—and reconcile every lot before releasing another into a shared bottleneck.

Release the worker, station, and knives

Select PPE from both knife and disease hazards

OSHA 29 CFR 1910.138 requires employers to select hand protection from the task, conditions, duration, and identified hazards. The employer’s assessment determines cut-resistant protection on the non-knife hand and any forearm, torso, or foot protection; the species and splash assessment determines disposable gloves, eye/face protection, protective garments, and respiratory protection where needed; the sanitation program determines how those layers are changed and cleaned.

A disposable glove is a contamination barrier, not cut protection. A cut-resistant glove is not puncture-proof and does not permit the off hand in the blade path. If layering makes the grip insecure or the PPE cannot be cleaned for the task, stop and have the program owner correct the configuration.

Cover cuts and broken skin under the facility procedure. A knife puncture, tissue splash to eyes or mouth, torn glove over broken skin, or other suspect zoonotic exposure triggers immediate work stop, first aid/decontamination, supervisor notification, product control, and medical/public-health assessment under the exposure plan.

Release a sanitary station, not a clean-looking room

The intake dock, dirty work, clean cutting room, tools, racks, tubs, scales, grinder, packaging equipment, and cold storage each need a released status under the operation’s written procedure. 9 CFR 416.4 and 9 CFR 416.13 are useful federal official-establishment anchors, not a claim that every game processor is an FSIS official establishment.

Use only the approved chemical, concentration, water condition, contact time, rinse/no-rinse step, drain/dry step, verification, and record in the actual program and product label. This guide gives no bleach ratio, sanitizer strength, wash temperature, soak time, or universal “sanitize between deer” recipe.

Inspect both knives before issue

Under adequate light:

confirm model identity: 68090 / 510 for break, 68060 / 508 for trim;

inspect the complete edge for chips, cracks, deep rolls, missing metal, active rust, and residue;

inspect the point and spine for bends or damage;

confirm the blade is secure, all three rivets are present and tight, and hardwood is not cracked, loose, swollen, splintered, or carrying trapped residue;

confirm each knife has the released sanitary status and a dry, secure grip;

verify the knife-rest, dirty-utensil route, sharpening station, and spare knife are ready.

Quarantine any uncertain knife. A steel can realign an appropriate rolled edge; it cannot repair a chip, tighten a rivet, close a handle crack, remove corrosion qualification, or sanitize a dirty tool.

Prove the edge without touching it

Use the facility’s approved edge test or a piece of designated sacrificial trim. The edge should start and draw without crushing, skating, or a sudden forceful breakaway. If it needs push, exchange it through the controlled sharpening route.

Hyde states only that these blades are ground and honed. The sharpening program owns those values. A fingernail, thumb pad, or improvised paper test over product is not an inspection method.

Break the accepted lot with the 68090

Begin with a released, skinned/eviscerated quarter or boneless piece

This doing sequence starts after any hide, viscera, head/high-risk tissue, and testing-sample work required by the intake plan has been completed by the appropriate task and the piece has been released to the clean cutting room. Do not use the 68090 to “finish field dressing” at the break table.

Orient the broadest stable face on the released bench. Identify the lot, species, piece, customer cut order, visible seams, solid bone, projectile-damage zone, and intended outputs. Put separate labeled tubs for named cuts, trim, grind, held material, inedible waste, and foreign material outside the knife’s path.

Choose the 68090 for structure, not every cut

The 68090 earns its place when its ten-inch edge can cross the planned boneless face in one draw and its 1-5/8" blade depth helps hold that plane. It is the correct member for separating a shoulder or large muscle group at a visible soft-tissue attachment, converting a released quarter to manageable boneless groups after the bone work is handled, and squaring large roast faces.

It is not a skinner, boning knife, bone saw, cleaver, or pry bar. If the line follows bone closely, use the boning station. If the line crosses solid bone, use the approved saw.

Stabilize the piece without putting a hand in the exit

Set the work so it cannot roll, rock, or close on the blade. Stand with the intended draw and harmless overtravel clear of thigh, torso, coworker, tray, rail, and the off hand. Keep the off hand behind the cut plane, fingers together, never curled underneath a blind exit.

Plan where resistance disappears. The knife travels after the last fibers part. A safe cut gives that travel empty space.

Open visible seams in short outward strokes

Where the cut sheet calls for natural-seam separation, lift the muscle group just enough to tension the pale connective plane. Use short strokes directed away from the off hand, exposing only the next visible section. Do not stab blindly, probe for a joint with the point, or pull hard against an edge aimed at the pulling hand.

When the seam releases, reduce force before advancing. A pointed open knife has no guard to arrest a hand sliding forward, and neither registered model has a drop-protection claim.

Make cross-grain cuts as full-edge draws

Place the heel at the near edge, align the blade to the specified face, and draw so the full edge travels. Slicing comes from lengthwise edge movement; pushing straight down turns the blade into a wedge, compresses meat, and increases force. A smooth continuous face is the readback. A scalloped face records re-entry.

If one controlled 68090 draw does not cross, stop. Do not saw faster. Confirm edge condition, product state, work support, and tool route. Frozen-hard product, hidden bone, or a face beyond the approved stroke belongs to another method.

Follow soft joints; never hack solid bone

Where an authorized separation crosses a joint, flex the piece only enough to expose the soft joint space and sever the visible connective tissue with the edge moving away from the off hand. When the blade repeatedly meets hard structure, the anatomical line or tool is wrong. Stop, inspect the edge, and transfer to the boning or saw station.

Chopping, striking the spine, twisting, and prying can chip the edge and create foreign material. The broad butcher pattern is a slicer.

Control projectile damage and foreign material as a hold, not a trimming guess

Segregate the wound channel/projectile-damage region and any tissue containing visible metal, plastic, broadhead, bone, hair, dirt, or other foreign material. Do not send it into the grinder, where one fragment becomes a batch-wide problem.

Visible fragment removal does not prove that all fragments are gone. The facility decides the trim margin, detection or imaging method, hold, donation restrictions, and disposition from its hazard analysis and regulator guidance. The knife operator records what was found and where; the operator does not declare the remaining product fragment-free.

Transfer manageable groups to boning with identity intact

Place each separated group directly into its labeled lot container. The boner receives a named piece and an order, not an anonymous pile. Keep high-risk CWD tissues, inedible material, and foreign-material holds out of the clean boning stream.

Use the narrow boning knife to follow contours at bone and release meat without scraping or twisting the broad 68090 against hard surfaces. The butcher knife returns only after bone work, if a large boneless face still needs its stroke.

Trim and portion with the 68060

Move to the 68060 when the work becomes close

After large structures are separated and boned, switch to the 68060 for the job its one-inch-deep, .072" blade can do honestly: follow a curved muscle, lift silverskin, shave specified surface fat, clean damaged edges, remove visible connective tissue, and make smaller boneless portions.

The decision is not “small animal versus large animal.” It is structure versus contour. A large roast can need the 68060 around an interior curve; a small but broad boneless face can still benefit from the 68090’s one-stroke crossing.

Trim fat to the cut order, not to a photograph

Stabilize the muscle on a broad face. Lift a small tab of fat, hold light tension, lay the 68060 nearly parallel to the lean, and draw with the edge biased toward the expendable fat. Work in visible increments. When red lean begins leaving with the fat, flatten the angle and reduce tension.

Do not turn “clean venison” into a universal zero-fat specification. Deer tallow, feral-swine fat, bear fat, and other species differ; customers and processes differ. The cut sheet and product standard own what stays. Yield records show whether appearance is being bought with saleable lean.

Lift silverskin under tension

Start a tab with the forward edge, grasp the membrane with the off hand or approved gripping aid, and tension it away from the muscle. Slide the 68060 underneath with its face nearly parallel to the lean, edge slightly toward the membrane. Work a visible strip at a time.

If the membrane tears into tabs, stop. Restore a clean edge, tension evenly, and verify sharpness. Pushing downward into the lean creates gouges and converts good product to trim.

Remove damaged and contaminated tissue under the program

Follow the facility’s accepted trim/hold criteria for projectile damage, bruising, hair, fecal or ingesta contamination, abscess/lesion areas, dirt, and other defects. Do not “trim until it looks normal” when the hazard, extent, or diagnosis is uncertain. Do not wash contamination across a larger surface or aerosolize it with high pressure.

Place removed material directly into the designated hold, inedible, or foreign-material container. Keep it out of grind trim.

Square one reference face, then portion from it

For roasts, steaks, cubes, strips, or other boneless portions, true one end only enough to establish a reference plane. Measure or use the released guide named by the cut sheet with the knife parked. Hold the blade square and make one full sliding draw.

Verify thickness, weight, count, orientation, and package allocation at the required frequency. Do not compensate for a thin portion by making the next one thick. Segregate the miss to its lawful rework or trim route.

Build the grind stream deliberately

Only clean, released, correctly identified trim enters the grind tub. Remove hard connective tissue, excessive surface material under the cut order, and every held or suspect piece before staging. Keep each animal individual when the intake/testing/customer program requires it. Never use the grinder to make projectile damage, an unknown lesion, dirty trim, or a cut mistake disappear.

The grinder is a separate hazard and sanitation system. Guards, feed tools, lockout, setup, disassembly, cleaning, temperature control, foreign-material control, and batch records belong to its own procedure. Neither Hyde knife enters a running grinder throat or substitutes for its feed tool.

Control the batch while it is moving

Keep every knife stroke inside a clear envelope

Every cut travels away from the body and away from the off hand. Keep coworkers out of the planned path and likely overtravel. Put the knife flat in the designated rest before moving tubs, reading tickets, touching a scale, changing gloves, labeling, or clearing the bench.

Never leave a knife under product, in a sink, edge-up in a tub, or loose in a pile of tools. Never catch a falling knife. Step back, let it fall, control the nearby product, and route the knife through dirty-utensil and inspection control.

Stop on force, drag, slip, or changed work

the edge compresses or tears instead of drawing;

the product is frozen hard, unexpectedly warm/soft, rolling, or closing on the blade;

the handle or glove is slick;

the point or edge is moving toward the off hand;

the knife meets solid bone or a hard inclusion;

the anatomy, species, cut order, contamination status, or lot identity is uncertain;

a worker is asked to use an unfamiliar method or another person enters the stroke envelope.

Set the knife down, protect the lot, and correct the condition. More force is not a recovery method.

Exchange knives before edge drift becomes yield drift

A dulling edge first shows up as extra pressure, ragged silverskin, smeared fat, crushed faces, and repeated strokes. Exchange through the controlled sharpener route before those defects become normal. Keep ready, dirty, sharpening, quarantine, and released knives physically distinct.

Steeling realigns an appropriate rolled edge; sharpening removes metal when steeling no longer restores the cut. Use only the facility-approved tool, geometry, PPE, placement, sanitation, inspection, and authorization. Do not steel over open product or walk through the room carrying an exposed knife and steel.

Treat every contamination event as a status change

A floor drop, dirty rack, inedible-container contact, species/allergen/ingredient transition, tissue splash, glove tear, wastewater splash, CWD high-risk tissue contact, damaged tool, or unknown surface moves the knife/product/station into the relevant dirty or hold state. An apron wipe changes appearance, not status.

Record which lot and outputs were exposed back to the last confirmed control.

Monitor the cold chain as a production variable

Read and record the process temperatures/times at the locations and frequencies in the plan. Work in small enough lots that boning, trim, grind, and packaging do not create an uncontrolled queue. Return unused pieces and completed packages to the designated cold hold on schedule.

This page deliberately states no universal room temperature, carcass-core temperature, maximum bench time, aging time, freezer setting, freezing rate, or shelf life. Species, product form, intended process, jurisdiction, and validated plan change those values. If a limit is exceeded or a required record is missing, hold the affected lot. Smell, color, a cold room, or “we have always done it this way” cannot replace the record.

Close the lot

Inspect workmanship before packaging hides it

Under strong light, compare the output to the order:

named cuts and quantities match the cut sheet;

large faces are continuous rather than scalloped;

portions meet required weight, thickness, shape, and orientation;

fat, silverskin, connective tissue, and damaged areas are handled to the specification;

no avoidable gouges, bone chips, hair, dirt, metal, packaging fragments, or held tissue remain;

grind trim is clean, released, and correctly identified;

every piece still carries the correct animal and customer lot.

Hold output back to the last conforming check when a recurring defect shows process drift.

Reconcile mass and identity by stream

To the degree the operation requires, account for received weight, named cuts, whole-muscle packages, grind, saleable trim, inedible material, held/test material, foreign-material trim, rework, and disposal. Yield is a diagnostic:

lean in the waste stream indicates over-trimming;

too much grind can hide poor cutting or an ambiguous order;

unexplained loss suggests identity or weighing failure;

extra packaged product suggests a cross-lot error, not a bonus.

Do not close the ticket until every container, package, head/sample where applicable, and hold status is reconciled.

Package and label from one lot at a time

Package with the released system and the customer order in view. Apply the required product identity, lot/customer link, species, date, weight/count, handling statement, test/hold status, ingredients/allergens where applicable, and regulatory marks or legends only when the law and inspection lane authorize them.

Move completed packages to the designated cold storage promptly under the plan. Keep positive, pending, nonconforming, returned, and release-ready lots physically and electronically distinct. A freezer shelf is not a quarantine system unless location and status prevent accidental pickup.

Release only after every hold is closed

Before customer pickup, donation, sale, or transfer, verify:

legal/intake documentation accepted;

lot reconciliation complete;

disease testing closed where required or elected;

no contamination, foreign-material, cold-chain, identity, or inspection hold remains;

package labels and count match the ticket;

If a CWD-positive result arrives after packaging, the fact that the meat is wrapped does not change CDC’s direction: do not eat it.

Clean, inspect, dry, and store the knives under the written procedure

Remove product and gross debris; clean; rinse where the chemical system requires; sanitize or decontaminate under the approved method; complete the required contact, drain, dry, inspection, verification, and record steps. Include the blade-handle junction, rivets, knife rest, sharpening tools, tubs, scale, grinder components, benches, and every shared surface named by the procedure.

After the required wet process, dry the high-carbon blades promptly and store them in the protected clean rack or controlled sheath.

Inspect again after cleaning. Quarantine active rust, pits beyond the program criterion, missing metal, bent point, cracked or swollen wood, loose rivet, blade movement, or any surface that no longer cleans and releases reliably.

Inspection, rejection, and discard — who is allowed to decide

The customer cut sheet and the designated quality checker decide whether a roast, steak, trim stream, or package meets the order. A workmanship miss may be reworked, redirected to an approved grind/trim product, returned, or credited under the business procedure. It is not automatically waste, and it is never relabeled as the requested cut just to close yield.

The safety, maintenance, and sanitation programs decide whether 68060 or 68090 is permitted, intact, sharp enough for controlled work, cleanable, clean, sanitary, dry, and releasable. A knife can cut and still be rejected for rust, handle damage, loose rivets, wrong construction, contamination, or the absence of required guarding.

The cutter’s job is to stop, segregate, preserve identity, record facts, and protect other lots. Trimming wider is not a disease test. Grinding is not a disposition. Freezing is not a universal pathogen kill step. Washing is not proof of sanitation.

Non-negotiable consumer boundary

CDC says not to eat meat from a CWD-positive animal. That is the only disease disposition this guide states categorically.

What goes wrong (and the fix)

Two animals enter one tub. Identity control failed before knife work began. Stop both lots, hold every downstream package and grinder batch connected to them, reconstruct only from defensible records, and let the authorized owner decide disposition. Visual sorting cannot reliably restore identity.

The customer’s tag or possession record does not match the carcass. Do not accept on a promise to “bring the paperwork later.” Keep the material outside released production and follow current wildlife-agency and facility procedure.

The carcass arrives warm or its cooling history is unknown. Measure and record what the intake plan requires; hold the lot. Moving it quickly into a cooler does not erase the receiving deviation.

The carcass smells normal, so the receiver wants to overrule the temperature record. Odor cannot prove safety.

A cervid is awaiting CWD results but the grinder is open. Keep the lot whole-muscle/individual and on hold under the program. Do not pool it. The grinder is a cross-contamination amplifier.

Do not salvage visually normal meat.

The processor cleaned normally after a CWD-risk lot and assumes prions are handled. Ordinary sanitation is not automatically prion decontamination.

Do not cut through, rinse away, taste, or blend it.

Blood or tissue splashes into an eye or onto broken skin. Stop work; control the knife and product; use the facility’s immediate decontamination/first-aid procedure; report the occupational exposure; and obtain medical/public-health assessment appropriate to species and circumstances.

The 68090 keeps striking bone. The cut line or task is wrong. Stop, inspect the edge for damage, re-identify the soft joint, or move the piece to the boning/saw station. Do not chop, twist, or pry.

The cut face is scalloped. The edge was dull, the piece moved, or the planned face exceeded one controlled 68090 draw. Correct support and edge. If depth still exceeds the registered method, route to the approved long-stroke tool rather than sawing.

The 68090 gouges silverskin work. It is bridging the contour. Move to the 68060, reduce the blade angle, tension the membrane, and work in shorter visible increments.

The 68060 flexes or wanders in a large cross-cut. The close-work knife has been asked to break structure. Move back to the 68090 if the cut is boneless and within its stroke; otherwise route to the proper station.

Fat smears instead of peeling. Edge condition, product condition, or excessive pressure is wrong. Stop and correct through the sharpening/cold-chain program. More force makes the handle slick and the trim worse.

The handle becomes slick. Put the knife flat in its rest immediately. Change contaminated PPE and clean/dry the handle under the sanitation procedure. Neither registered knife has a guard to stop a forward slide.

The knife falls. Do not catch it. Step clear, control exposed product, retrieve through the dirty-utensil procedure, inspect for point/edge/handle damage, clean/sanitize, and release only under the program.

An edge chip or loose rivet appears mid-lot. Stop; quarantine the knife; hold product back to the last confirmed intact inspection; locate and account for missing material; and run the foreign-material procedure. Replacing the knife does not close the product investigation.

Visible projectile fragments are removed, so the remaining trim is sent to grind. Stop. Visible removal does not prove the region is fragment-free. Follow the facility’s hazard-analysis trim, detection, hold, and disposition controls.

Clean trim from several customers is combined to improve grinder yield. Individual return and CWD/test identity are broken. Keep one animal/customer batch unless the legal and customer program expressly authorizes pooling and preserves every required control.

The cut ticket changes after breaking. Park the knife and revise the controlled order. Do not ask the cutter to remember an oral exception through boning, grind, and packaging.

Packages are correct but customer names are wrong. This is a lot-control failure, not a label typo. Hold all implicated packages and reconstruct under the traceability procedure before release.

Sanitizer residue remains on a bench or knife. Stop, protect or hold exposed product, and follow the chemical label and sanitation corrective action. An improvised rinse can be as wrong as skipping one; the approved system owns the sequence.

Rust appears after the wet process. Quarantine the knife for inspection. Correct drying, storage, chemical compatibility, and tool acceptance under the program. Do not polish active rust over product and resume.

The batch outruns packaging. Stop releasing animals to break, return identified material to its controlled cold hold, and clear the bottleneck. Unlabeled tubs on a warm bench are not work in progress.

A customer asks whether the knives are “USDA approved.” The accepted Hyde record provides no such certification. Answer with the exact construction and dimensions, then ask the facility/regulator whether the tool is permitted. Do not convert catalog presence into approval.

Buyer tests — choose from the exact union without guessing

“I have released, boneless deer quarters and need to separate large muscle groups and square roasts.” Start with 68090. Its 10-inch stroke, deeper blade, and .095" stock are the structure tool. Add 68060 when the work turns to silverskin and portions.

“The quarters are already broken and boned; I am trimming backstraps, removing silverskin, and making freezer portions.” Choose 68060. Its one-inch-deep, .072" blade is the contour and close-work answer.

“We process a season’s deer individually from intake through grind.” The honest knife purchase is 68090 + 68060, plus tools this store union does not supply for skinning, boning, bone cutting, grinding, packaging, testing, PPE, sanitation, and cold storage.

“I want one knife for skinning, boning, quartering, sawing bone, trimming, and grinder feed.” Buy neither on that premise. No single knife honestly covers those tasks. This pair begins at clean breaking/trim; separate patterns and machines own the rest.

Move to the safety-program selection process; do not call the pointed open 68060/68090 safe by habit.

“Our food-contact specification prohibits carbon steel or hardwood.” Neither qualifies.

“Can I buy the 68090 and use more force when it gets dull?” No. Edge drift is the signal to exchange/steel/sharpen under the program. Force makes an open pointed knife less controlled.

“Which one makes price or stock sense today?” Read the live linked PDPs.

The history footnote — the communal job became a traceable batch

Processing wild meat in quantity is older than the commercial butcher shop. National Park Service accounts of Mandan, Hidatsa, and Arikara foodways describe game as both immediate food and preserved winter supply, with deer and buffalo meat cut into strips and dried; the same account notes that these food systems remain living community practice (NPS — Subsistence: Tribal Nutrition & Health). The historical lesson is not a romantic cutting trick. It is that a large animal has always created a batch problem: divide labor, preserve what cannot be eaten immediately, and waste as little as possible.

The broad American butcher knife itself has no documented inventor. Hyde’s defensible place is the Massachusetts edge-tool industry and a Trade Knives catalog that still separates the 8-inch close knife from the 10-inch heavy knife.

The deepest continuity is the division of work. The old camp and the modern game room both succeed when the large cut, close trim, preservation step, and accountability for the whole animal remain distinct.
