It gives no killing, stunning, sticking, bleeding, skinning, evisceration, head removal, spinal-cord/SRM removal, or carcass-splitting instructions. Those operations require different competence, tools, humane-handling controls, inspection decisions, and law.
Time: no universal duration is honest. Species, carcass size, bone-in versus boneless orders, cutter experience, saw work, packaging method, sanitation changeovers, and cold-room capacity change the day. Plan from the approved cut order, staffing, equipment capacity, and the operation’s validated cold-chain limits. This guide invents no processing time or temperature.
Difficulty: advanced anatomy, knife control, contamination control, and regulatory discipline. Strength is not the skill: whenever the knife needs force, stop and diagnose edge condition, product stability, bone contact, tool choice, or an unfamiliar anatomical line.
Both are open, pointed traditional patterns.

Boundary zero: choose the lawful lane before the knife comes out
Name the legal lane in writing. “Farm use” is not a regulatory category by itself. The personal-use and custom exemptions are narrower. FSIS explains that custom-exempt livestock product is for the animal owner’s household, household members, nonpaying guests, and employees, and it must remain identified “Not for Sale”; exempt product is still subject to adulteration, sanitation, humane-handling, recordkeeping, and other applicable requirements (FSIS Directive 8160.1; FSIS exemption guide). State and local law may add licensing, inspection, zoning, wastewater, rendering, or food-establishment requirements.
Do not turn ownership into permission to sell or donate. Product made under a personal-use or custom exemption does not become saleable because it was cut cleanly, frozen, vacuum-packed, divided among owners, or processed in a mobile unit. FSIS states that personal-use and custom-exempt meat is not eligible for donation outside the statutory household/nonpaying-guest/employee scope (askFSIS). If any finished package will be sold, offered for sale, donated, supplied to a restaurant, or otherwise enter commerce, stop and obtain the exact inspection and labeling ruling for that transaction.
Mobility changes utilities and workflow; it does not erase jurisdiction. Confirm the approved premises, inspection coverage, water source, wastewater and inedible disposal, refrigeration, transport, security, and records for the particular unit and stop location.
A carcass without reliable identity or disposition does not become acceptable because the cut surface looks normal.
Before the first cut: freeze the plan and release the worksite
Translate the owner’s wishes into a species-specific cut sheet. Before product enters the room, record owner/lot identity; species and carcass/quarter count; bone-in or boneless choices; named roasts, chops, steaks, ribs, grind, stew, fat, bones, and edible offal to be retained; portion or package sizes; grind formulation and ingredient/allergen status, if any; packaging and label requirements; and lawful disposition of inedible material. “Standard cuts” is not a cut order. Do not substitute beef, pork, or lamb anatomy by analogy; use a trained cutter and the applicable authoritative cut reference.
Sequence from large structure to small finish. The workable order is: receive and verify → stage one identified unit → make only the required saw/bone separations with approved bone equipment → separate primals and subprimals → bone with the proper boning knife where ordered → break large boneless faces with 68090 → trim and detail with 68060 → portion → segregate grind and other trim → package and label → return to cold control. This is task sequencing, not a universal anatomical map. Species, carcass style, cut order, and establishment procedure decide the actual separation lines.
Do not begin with a warm carcass and hope the freezer catches up.
Build a one-way product flow. Separate the receiving/dirty interface from released fabrication and packaging. Keep boots, aprons, totes, hoses, tools, and hands that contact hides, feet, floor, viscera, inedible containers, livestock areas, or the exterior of transport out of the clean zone until the written changeover is complete. Position edible trays beyond the knife path; inedible and held containers must be unmistakable and reached without carrying an exposed knife across product. Pets, livestock, insects, dust, mud, fuel exhaust, and spectators do not belong in the processing envelope.
Reject the romantic open-barn setup when it cannot be controlled. A farm setting still needs protected, cleanable food-contact surfaces; potable water; handwashing; drainage and wastewater control; pest and environmental exclusion; adequate light; refrigeration; and a way to keep carcass and packaging off floors and unclean structure. Windborne dust, dripping condensation, manure traffic, flies, unprotected lights, and pressure-washing splash are contamination routes. Move the job into an approved controlled room or unit if the site cannot control them.
Custom-exempt livestock operations also remain subject to applicable sanitary-condition requirements, as FSIS Directive 8160.1 explains. Inspect the rail/hooks, saw station, boards, knife rests, scales, lugs, grinder/packager contact parts, water, drains, handwash, and chemical controls. Follow the approved chemical label and written sequence. This page invents no water temperature, concentration, contact time, rinse rule, or verification frequency.
Release each knife as a food-contact tool and as a cutting tool. Under good light, verify the model and task; continuous edge; no chip, crack, bent point, active rust, pit, residue, splinter, loose rivet, or handle movement; secure dry grip; and acceptance of high-carbon steel and a triple-riveted hardwood handle by the site’s sanitation/HACCP/tool program. “Ground and honed” is Hyde’s complete edge claim.
Select PPE from the real task and verify that it still permits control. For employees, 29 CFR 1910.138 requires hand protection selected from the task, conditions, duration, and identified hazards. The hazard assessment should consider cut and puncture exposure to the non-knife hand, forearm and torso; dropped knives and heavy pieces at the feet; eye/face splash; wet sanitation; cold; lifting; slips; saws; and biological exposure. Fit matters: OSHA’s meatpacking guidance warns that poorly fitting or overly layered gloves can reduce feedback and grip. This guide does not prescribe a universal mesh, cut-level, gauntlet, apron, boot, or eye-protection class.
Establish a knife-rest location, dirty-tool route, saw exclusion zone, hoist controls, first-aid response, and a command that stops all cutting. Children, visitors, and untrained helpers do not work inside the envelope.
Choose the two knives honestly
Give 68090 the large soft-tissue and boneless breaking work. Its accepted catalog specification is 10" × 1-5/8" × .095", 13 gauge. Use the long edge for committed draw cuts through broad boneless faces, natural seam connections, heavy fat and connective tissue, and general primal/subprimal work that one ten-inch stroke can cross. The blade is a slicer, not a cleaver, pry bar, or bone saw. If the edge meets solid bone, stop and re-identify the joint or route the required bone line to approved bone-cutting equipment.
Give 68060 the close finishing work. Its accepted exact-model catalog specification is 8" × 1" × .072", 15 gauge. Use the shorter, shallower blade for lifting silverskin under tension, shaving external fat to the cut order, gland and membrane work, cleaning cut faces, squaring smaller boneless pieces, and portioning faces one eight-inch draw crosses. Move back to 68090 when the smaller blade must saw, bridge a contour, or accept force. The pair works because command and feedback are different jobs.
Do not extend the pair into work its geometry does not cover. Neither knife is a humane-slaughter tool. Neither substitutes for a curved skinner, narrow boning knife, saw, cleaver, powered splitting equipment, hook, hoist, or grinder. Neither is engineered for a station requiring a guard, round tip, sealed synthetic handle, stainless blade, tether, or named certification.
Prove the edge without touching it. Test on designated sacrificial trim under the same sanitary control as the product. A serviceable edge starts and draws without product compression followed by a jump. If the cut begins to require push, exchange or maintain the knife at the approved sharpening station before continuing. Never test with a thumb or fingernail.
Receive, inspect, and stage the carcass or quarter
Receive one identified unit into the clean workflow. Match tag/mark, owner, species, unit count, legal status, cut sheet, and cold-chain record. Keep custom-exempt and inspected product, different owners, species, and lots separated by the operation’s approved time/space and identification controls. For custom-exempt livestock product, maintain the required “Not for Sale” identity through cutting, wrapping, storage, and return to the owner; do not wait until the final box to remember it.
Inspect the fabrication surfaces before cutting. Under adequate light, examine all exposed surfaces and cavities available to the fabrication step for visible contamination, hair/wool, soil, ingesta, fecal material, milk, foreign material, retained dirty dressing surfaces, pests, or damage. FSIS identifies feces, ingesta, and milk as primary pathogen routes and enforces zero visible tolerance at the official-establishment verification point (FSIS Directive 6420.2). A fabrication cutter does not silently slice contamination through the lot.
Do not “clean” uncertainty into invisibility. Uncontrolled rinsing can spread contamination across surfaces and create contaminated splash, floor, clothing, and equipment. Trimming may be an approved corrective step in a specific program, but the authorized procedure decides who performs it, how the affected product is controlled, what area is removed, how the knife and station are changed over, and who verifies the result. If the program does not define the response, hold and escalate.
Stabilize suspended or bench work before exposing an edge. A rail, hoist, gambrel, hook, or table must be rated, secure, cleanable, and arranged so product cannot swing, roll, or fall into the cutter. Never use the knife hand to arrest a moving quarter. On the bench, put the broadest stable face down and support a rocking piece with an approved food-contact fixture, not fingers wrapped under the cut.
Convert structure in controlled task blocks
Make required bone separations first, at the bone station. Follow the species-specific cut sheet and trained anatomical reference. Open a joint only where the soft joint space is identified; if the line crosses solid bone, move it to the approved saw or other bone-cutting tool. Inspect the output and the bone tool under its own foreign-material and sanitation program before bringing pieces to the knife bench. Never chop bone with 68090 or 68060, hammer their spines, twist a tip in a joint, or use the blade as a wedge.
Route the accepted carcass by species and cut order—not by one borrowed diagram. This is the task map a lead cutter uses to stage the day; it deliberately gives no saw line, vertebral landmark, joint-entry direction, or slaughter/dressing step:
Hog carcass or sides: keep owner/lot and side identity through the initial approved bone separations; stage the cut sheet’s shoulder, loin, belly/side, ham/leg, rib, jowl, fat, bone, and trim streams; then run each released piece through boning where ordered, 68090 breaking, 68060 finishing, portioning, and packaging. Cure, smoke, sausage, rendered-fat, and edible-offal work leave this raw-fabrication guide for their own controlled processes.
Lamb carcass or sides: stage the cut sheet’s shoulder, rack/rib, loin, leg, breast/flank, shank, bone, fat, and trim streams only after the approved joint/saw work establishes them; preserve paired-cut identity where the order requires it; then move from larger 68090 draws to 68060 trim and portions. Do not import pork or beef separation lines because the names sound similar.
A quarter does not contain every named beef primal, so the incoming identity controls what may emerge.
The owner’s lawful cut sheet may use regional names, but every name must map to one physical stream before cutting starts.
Separate natural seams before cutting through muscle where the order allows. Place the work on a stable face. Lift the target muscle only enough to tension the translucent connective plane; keep the off hand behind or to the far protected side of the edge; expose a short visible section; and use short outward strokes from 68090. Continue only while the plane remains visible. Blind tip-first probing toward a hidden hand is not seam work.
Use a full-edge draw when the specification crosses a boneless face. Set the heel at the near side, align the blade to the required plane, and draw so the edge travels lengthwise through the cut. A butcher pattern slices by edge travel; straight downward pressure turns it into a wedge. Let the 68090’s depth hold the face straight and keep the hand above the board. A scalloped face records repeated re-entry.
Bone only with the proper boning tool and training. A narrow stiff or flexible boning knife is shaped to follow bone with controlled clearance; these broad Hyde knives are not. Transfer boneless muscles back to the 68090/68060 bench only after bone removal and its inspection are complete. This separation reduces edge damage, bone fragments, and the temptation to pry.
Trim in visible planes with 68060. For external fat, start a controllable tab, lift gently, lay the blade nearly parallel to the lean, and draw toward the expendable material. For silverskin, create tension, bias the edge slightly toward the membrane, and advance only where the plane can be seen. For glands or localized defects already authorized for workmanship trimming, isolate the target without opening it into surrounding product. Do not chase a glossy appearance by planing sound lean; the cut sheet, not aesthetics, defines done.
Square one reference face, then portion from it. Establish the minimum clean, square reference needed. Measure or gauge from that face according to the cut order; keep the blade in the specified plane; make one sliding draw; and verify weight, thickness, orientation, or count at the operation’s required frequency. Do not hide a thin portion by making the next one thick. Segregate misses for authorized rework or another lawful product stream.
Keep the knife path separate from the off hand at every scale. Fingers do not hook beneath the far-side exit; the off hand does not resist in front of the blade; and a helper never catches a separating piece inside the stroke. Stand so a completed draw clears product without entering the thigh, apron, or another worker.
Set down; do not pass through traffic. Put the knife flat in its assigned rest, edge protected and handle available, whenever the work moves, someone enters the envelope, the product rocks, a measurement is taken, or the cutter is interrupted. If transfer is unavoidable under the site procedure, use a controlled handle-first exchange; never toss, slide under product, leave edge-up, or place a knife in a sink or opaque tub.
Control contamination, identity, edge condition, and cold during the run
Return finished trays to controlled refrigeration on the plan’s schedule. Record the monitored product condition at the specified points. A farm room, cooler, refrigerated truck, freezer, and mobile unit all have recovery and loading limits; door closure and cold air are not evidence that product met them.
Maintain owner/species/lot identity on every tote, rack position, grinder batch, package, and box. An anonymous trim lug is not traceability.
Treat grinding as a separate higher-spread operation. Grinding distributes any surface contamination through a batch and creates equipment niches beyond hand-knife sanitation. Accumulate trim only in the identified, cold-controlled, approved stream; verify formulation and any added ingredients/allergens; change over and release the grinder under its written procedure; keep batches traceable; and follow the applicable HACCP/inspection/labeling controls. This guide does not teach grinder operation or supply a microbial control.
Exchange a contaminated knife; do not wipe it clean on the job. A knife that contacts floor, boot, apron, exterior transport surface, inedible container, unclean hook, contaminated carcass area, or another incompatible stream leaves production through dirty-utensil control. Replace it with a released tool. Clean, sanitize, inspect, and release the affected knife under the written procedure before reuse. A rag, cardboard, hot-water bucket, or rinse hose is not an improvised sanitation program.
Stop and account for tool damage immediately. On a chipped edge, bent point, handle splinter, loose rivet, metal strike, saw contact, or missing fragment, stop the process; identify product back to the last confirmed intact inspection; hold the affected scope; find and account for missing material using the approved detection/search procedure; and let the authorized food-safety system decide disposition. Replacing or grinding the knife closes the tool failure, not the product investigation.
Maintain the edge away from exposed product. Steeling realigns a rolled edge; sharpening removes metal when steeling no longer restores the cut. Use only the facility-approved method, trained operator, placement, guarding, sanitation, inspection, and release steps. Protect product from metal swarf and abrasive debris; clean and sanitize the maintained knife as the procedure requires before return. Hyde provides no angle, number of passes, abrasive progression, machine setting, or maintenance interval for either model, so none is invented here.
Change over when the risk changes. A different owner, lot, species, custom/inspected status, allergen/ingredient formula, edible/inedible contact, contamination event, packaging state, or raw/ready-to-eat boundary may require time/space separation, new utensils, sanitation, records, and verification. The written SSOP/HACCP/custom-exempt/state program owns the trigger. “All raw meat is the same” is not a control.
Stop on fatigue and force drift. Loss of grip, forearm fatigue, numbness from cold, repeated knife correction, rising pace, slippery floors, a changed product condition, an unfamiliar cut, or a helper entering the envelope means the job has changed. OSHA’s meatpacking ergonomics guidance emphasizes task-appropriate tools, proper cutting technique, sharp-knife programs, suitable workstations, and PPE that does not increase grip force (OSHA 3123). Reset staffing, bench height, edge, batch, pace, or training before resuming.
Mobile-unit and farm-site operating loop
A passed inspection at yesterday’s farm does not prove today’s setup.
Keep farm traffic outside the unit’s clean path. Define separate routes for carcass entry, personnel entry/change, packaging, edible output, inedible output, water service, and wastewater. Do not drag hoses across manure or then into the unit; do not carry unclean gambrels, boots, aprons, livestock tools, or exterior totes into fabrication; do not discharge wash water at the worksite without the approved disposal path. Close doors and control insects before exposed product enters.
Make utility failure an automatic product-control event. Loss of refrigeration, power, potable water, drainage capacity, sanitizer verification, lighting, safe hoist/saw function, identity records, or inspection coverage stops production. Protect and identify product, record the event, assess the monitored cold-chain and contamination scope, and use the written corrective-action/disposition process. Do not continue cutting to “get done before it warms.”
Close the unit before road movement. Reconcile every owner/lot and “Not for Sale” identity where applicable; move product to its approved transport/storage state; secure knives, saws, hooks, chemicals, waste, wastewater, packaging, and records; verify the refrigeration record and receiving destination; and complete the sanitation/inspection release required by the program. A moving vehicle is not a knife rack or an unsecured carcass cooler.
Package, inspect, and close the day
Hold systematic misses back to the last conforming check and correct the setup before release.
Package under the released process. Keep sealing surfaces free of fat and moisture as the packaging system requires; use materials approved for the intended refrigerated/frozen food use; verify seals under the packager’s procedure; and prevent raw-product contact with the clean exterior/label side. This guide supplies no vacuum setting, film specification, shelf-life, freezer life, or thawing/cooking instruction.
Label for identity and lawful status, not marketing. Apply the owner/lot, species/cut name, package quantity or weight, processing date or other records, safe-handling/inspection marks, ingredients/allergens, and storage information required by the actual lane. Custom-exempt livestock product must remain identified “Not for Sale” under the applicable rules. Do not apply a USDA mark, establishment number, certification, grade, origin claim, or safety claim unless the authorized program issued it.
Reconcile yield and disposition. Account, to the operation’s required granularity, for incoming carcass/quarter units; named cuts; saleable trim; grind batches; retained fat/bones/offal; rework; held product; and inedible material. Unexplained loss may indicate identity failure, unauthorized trim, unrecorded disposal, or contamination scope. The cutter reports facts; the authorized program decides release, rework, diversion, condemnation, return, or disposal.
If a limit is exceeded or a record is absent, hold product and use the corrective-action process. Color, touch, ice crystals, or a cold room do not reconstruct missing evidence.
Clean, sanitize, inspect, dry, and store the tools. Remove product and gross debris; clean; rinse if the approved chemical system requires it; sanitize at the label/program conditions; complete drain/dry, inspection, verification, and records; and include handle junctions, rivets, knife rests, board seams, scales, hooks, saw station, totes, packager, drains, and splash zones. After the required food-safety process, dry the high-carbon blades promptly and store them protected from contact and moisture. Any rust-control material must be approved for the actual food-contact use and managed under its label and the facility procedure. Never leave these hardwood-handled knives soaking or loose in a sink.
What goes wrong — and the controlled response
“The knife will not cross the piece.” First stop pushing. Check edge, product stability and condition, cut direction, bone contact, and whether the stroke exceeds the blade. Use 68090 rather than sawing with 68060; route bone to the saw; route deeper soft-tissue work beyond one ten-inch draw to the correct approved longer knife. Do not hammer, chop, or pry.
“The cut face is scalloped.” The edge is dull, the cutter pressed rather than drew, or the blade re-entered a face too deep for it. Restore edge and setup, use the whole 68090 edge once, or change tool class. Do not plane away good meat to hide the evidence.
“Lean is leaving with the fat.” The 68060 angle is too steep, tension is lifting muscle with the fat, or the operator is trimming to appearance rather than specification. Flatten the blade, reduce tension, make a thinner visible pass, and route removed lean to the lawful trim stream.
“Silverskin tears into tabs.” Edge condition, inconsistent tension, or a blade aimed down into muscle is the usual cause. Restore a clean tab, lay 68060 nearly parallel, bias the edge toward the membrane, and work only where the plane is visible.
“The point appears beside the off hand.” Fingers were under the exit or the hand was placed beyond the cut. Stop, reorient the work, put the off hand behind the cut plane, and allow the piece to fall free. PPE does not authorize flesh in the exit path.
“The handle becomes slick.” Put the knife flat in its rest. Exchange or clean contaminated PPE, control product exposed by the interruption, and clean/dry/release the handle under the procedure. Neither 68060 nor 68090 has a guard to stop forward hand travel.
“The knife was dropped.” Step away; never catch it. Control nearby product and people, retrieve it through the dirty-tool procedure, inspect for damage, and clean/sanitize/release before reuse. A pointed open knife has no catalog-stated drop protection.
Do not rinse, wipe, trim, or continue by improvisation.
A cutter’s senses can trigger review but cannot establish wholesomeness or lawful disposition.
“A blade chips or a rivet/handle loosens.” Stop, quarantine the tool, hold product back to the last intact check, account for foreign material, and document. No on-bench grinding and no silent knife exchange.
“Custom-exempt and sale product, or two owners, were commingled.” Stop packaging and distribution. Weight estimates and memory do not restore legal identity.
“The unit loses cold, power, water, drainage, or records.” Stop production, protect product, document the monitored condition and duration available from real evidence, and use the approved hold/corrective-action/disposition path. Do not invent a time-temperature history after the fact.
“The sanitizer check or label step fails.” Stop and protect exposed product; follow the chemical label and SSOP corrective procedure. Adding an improvised dose or rinse can be as wrong as skipping one.
“Rust appears after cleanup.” Remove the knife from food-contact service and inspect it under the facility tool program. Correct drying/storage and determine whether the traditional carbon-and-hardwood construction remains acceptable. Do not polish active rust above product.
“The day is behind schedule.” Reduce batch size, add trained staff within the approved plan, or hold remaining carcass under cold control. Do not speed knife strokes, skip sanitation, overload cooling, erase identity, or extend process limits to meet a clock.
Buyer and operator acceptance tests
Coverage test: Does the buyer understand that 68090 breaks soft tissue/boneless faces and 68060 trims, while slaughter, skinning, boning, bone cutting, hoisting, grinding, and packaging need other tools and training?
No Hyde evidence in the packet answers that question.
Safety-fit test: Can the worker hold each handle securely with selected sanitation/cut PPE, maintain a neutral wrist, keep the off hand outside the exit, and complete the required stroke inside the station envelope? If a written program requires guard, shield, round tip, or tether, this pair fails the test.
Cleanability test: Has the facility validated its own cleaning, sanitizing, drying, inspection, and storage procedure for these particular knives and chemical system without relying on an absent Hyde instruction?
Edge-system test: Is there an approved, guarded, sanitary maintenance method and enough released spare knives to exchange a dull/dropped tool without sharpening over food? No Hyde edge angle or pass count exists to copy.
Contamination test: Do pre-op, receiving, in-process, and post-op records show the required sanitation release, contamination controls, tool integrity, and corrective actions, rather than only a clean-looking final package?
No universal number from this page may be substituted.
Cut-order test: Do named outputs, bone state, portions, fat limits, packaging, labels, and yield reconcile to the owner/customer specification, with every rework/hold/inedible stream accounted for?
Release test: Has the person authorized by the actual inspection, HACCP/SSOP, custom-exempt, or state/local program released the product? Good knife work alone is never the release.
Where this guide ends — the exact honest scope
It does not teach or authorize slaughter, stunning, sticking, bleeding, dressing, skinning, evisceration, carcass inspection, SRM removal, condemnation, bone-saw operation, boning-knife operation, grinder operation, chemical sanitation parameters, refrigeration design, HACCP validation, veterinary judgment, legal exemption qualification, or sale. It is not a species cutting atlas and does not replace hands-on training.
The history footnote — old hand geometry inside a modern control system
A [Library of Congress image of Henry J. Ridings’s butcher shop, circa 1901]( shows the rail-and-bench world in which named cuts depended heavily on one butcher’s eye and hand.
The draw stroke is still recognizable. FSIS’s mobile-unit guidance is the modern farm expression of that history: the old work can travel, but the facility controls travel with it. Hyde’s defensible place in the story is narrower and stronger than an invention claim — an industrial Massachusetts blade maker still catalogs the traditional high-carbon, riveted butcher pattern by number and gauge.

It intentionally excludes slaughter, skinning, boning, saw, hoist, grinder, sanitation, packaging, PPE, and refrigeration equipment that the complete job still requires.
