It does not teach slaughter, carcass dressing, skinning, evisceration, boning an entire carcass, or cutting through bone. Those are different operations, with different tools, training, inspection, and hazards.

Job: convert a chilled primal into specified subprimals and portions on a stable food-contact bench: identify the cut, separate natural seams where the specification allows, make full-edge cross-grain draw cuts, trim to the required fat limit, and keep every output identified and cold.

Time: there is no honest “minutes per primal” promise across beef, pork, lamb, and different cut sheets. A trained cutter with a clear specification works in minutes; a first-time cutter should work one chilled piece at a time, stop to verify every unfamiliar seam, and expect layout and identification to take longer than cutting.

Difficulty: anatomy, specification discipline, and knife control. Strength is a warning sign. If the edge needs to be forced, either it is dull, the product is too hard, the cut is meeting bone, or the knife is being asked to cross more depth than its stroke.

Everything else: the establishment’s current cut sheet or the applicable USDA AMS Institutional Meat Purchase Specification · a stable, non-slip, cleanable cutting block or board at a height that lets the cutter keep the wrist neutral · a separate food-safe tote or tray for every saleable output and a clearly different inedible/waste container · scale, labels, food thermometer, and cold storage · an edge-maintenance station located so sharpening never crosses the product path · the hand, forearm, torso, and foot protection selected by the employer’s knife-task hazard assessment · a meat saw or other approved bone-cutting equipment when the cut line crosses bone. This store does not supply the cut specification, PPE system, sanitation chemicals, cold room, or bone saw, and the knife cannot substitute for any of them.

Before you start: define “break,” then define “done”

Begin with a primal, not a carcass. “Breaking” at this bench means taking an already separated primal or large subprimal and reducing it to the next named products. The incoming piece has already passed through slaughter and carcass-dressing operations. If the work in front of you still includes hide, viscera, a suspended carcass, or a backbone that must be split, stop: this is the wrong guide. Likewise, if the task is to remove every bone with a narrow boning knife or skin a carcass with a curved skinner, the broad Hyde butcher pattern is not the primary tool.

Put the product specification where the cutter can read it. “Make steaks” is not a specification. Identify the species and incoming primal; the required outgoing item names; bone-in or boneless state; separation lines; steak or roast thickness and weight tolerances; fat limit; and which trim streams stay saleable. USDA AMS maintains separate IMPS series for fresh beef, pork, lamb, veal, and goat, with named products, primal-separation diagrams, and purchaser-specified requirements. Use the applicable plant/customer cut sheet or IMPS item — never borrow an anatomical line from another species, another primal, or memory. This guide teaches the bench method; it cannot turn one generic paragraph into a beef, pork, and lamb cutting atlas.

Keep the cold chain visible. Bring out only the product the bench can process promptly; keep the remainder under refrigeration. For home or retail handling, FSIS says refrigerators should hold 40°F / 4.4°C or below, raw meat should be contained so its juices cannot contaminate other foods, and perishable food held above 40°F for more than two hours should be discarded. An official establishment follows its own validated HACCP plan and time/temperature controls; the household two-hour rule is not a substitute for that plan. Firm-chilled meat also cuts more predictably than warm, slack meat: the seams hold their shape, fat peels instead of smearing, and the blade tracks instead of pushing the work ahead.

Release the sanitary bench, not merely a clean-looking one. At an official establishment, pre-operational Sanitation SOP procedures happen before operations and are monitored daily (9 CFR 416.13); food-contact surfaces and utensils must be cleaned and sanitized often enough to prevent insanitary conditions and product adulteration (9 CFR 416.4). Follow the establishment’s chemical, concentration, contact-time, rinse, and verification instructions exactly. “Spray something on the block” is not sanitation. The knife, board, scale platform, trays, and any steel that can touch the blade or product belong inside that same procedure.

Inspect the knife before it meets food. The edge must be continuous and keen, the handle dry and sound, the rivets secure, and the blade free of active rust, pits, chips, and residue. A steel can realign a rolled edge; it cannot repair a chipped blade or sanitize a dirty one. Hyde’s family construction is high-carbon steel triple-riveted to hardwood.

Dress for the cut actually being made. OSHA’s current hand-protection rule requires employers to select protection from the task, conditions, duration, and identified cut/puncture hazards (29 CFR 1910.138). For a breaking station that ordinarily means the facility-specified cut-resistant protection on the non-knife hand and, where the hazard assessment calls for it, forearm, torso, and foot protection; sanitation barriers go over or integrate with that system as the facility directs. A glove does not make a crossing stroke safe, and an ill-fitting glove that weakens the grip creates its own problem. Confirm fit, dexterity, and cleanability under the written program rather than treating “mesh glove” as a universal prescription.

Choose the knife before the cut — the exact fork

Choose by stroke, point, and policy — in that order.

68090, 10-inch open pointed pattern: the default for ordinary primal breaking at a bench. Choose it when the planned cut can be crossed in one full draw, the point is useful for starting or entering a seam, and the station permits an unguarded knife. Its advantage is not “smaller is safer”; it is grip freedom and control at the general heavy-bench length. Its limit is depth, and there is no guard to catch a forward slide.

68180, 14-inch guarded pointed pattern: step up when the 68090 must re-enter the same cut — the ten-inch knife is sawing because the work is deeper than its stroke — or when policy requires a guard and the cut still needs a point. The 68180 is pointed.

68300, 14-inch round-tip safety pattern: choose this when the work needs a continuous 14-inch draw but no operation at that station requires piercing or a tip-first entry. Hyde’s catalog states that its round end protects workers’ feet from accidental drops and that its heavy steel shield protects fingers. The round end still slices from an exposed edge; it simply refuses the pierce. If nobody can name the job the point performs, the round tip is the honest default under a no-puncture program.

The common mistake is to call 68180 the round-tip knife because it is the guarded member linked to this job. It is not. 68090 = 10-inch, open, pointed. 68180 = 14-inch, guarded, pointed. 68300 = 14-inch, shielded, round. That identity is load-bearing.

Prove the edge on sacrificial trim, not with a fingertip. A keen breaking knife starts a draw with little downward force and leaves a smooth face. If it compresses and then jumps, steel or sharpen it at the designated station before production starts. NIOSH’s meatpacking laceration research found elevated risk around sharpening transitions and unfamiliar work methods; it recommends standardized sharpener type and placement and training in modified settings before workers take unfamiliar tasks. Keep sharpening out of the product and coworker traffic path, and return the sanitized knife to the bench under the facility procedure.

Break the primal

Orient the piece to the specification and make it stable. Put the broadest natural face down. The primal must sit without rocking; if it rolls, rotate it or support it with a clean food-contact block rather than pinning it with the off hand. Identify the outside fat face, exposed lean, bone or joint landmarks, and the direction of the major muscle seams. Set the saleable trays beyond the knife’s travel, not beside the blade. Put waste where it can be dropped without carrying the knife across the body.

Plan every stroke before the edge lands. Stand square enough that the knife can travel past the work without entering your thigh or apron. Put the non-knife hand behind the cut line or on the far side of the product, fingers together and never hooked underneath where the point can emerge. The knife hand uses a full, dry grip; the wrist stays neutral. No catching a falling knife, no passing edge-first, no setting a knife under meat or into a sink. If someone enters the stroke envelope, the edge stops and goes flat on the designated knife rest.

Open the first natural seam only as far as you can see. Where the cut sheet calls for seam separation, lift the muscle group enough to tension the translucent connective seam and use the forward part of the edge in short outward strokes, cutting the seam while leaving red lean on the saleable muscles rather than carving it away. The point may start an entry where the specification requires one, but it does not probe blindly into the product. Open a few inches, lay the seam visible, then continue. Pulling hard with the off hand while stabbing toward it is the classic false economy: fast until the seam releases, then the blade owns the hand.

Use the full-edge draw for a cross-cut. For a specified cross-grain separation or portion cut, place the heel at the near edge, align the blade square to the cut face, and draw through in one continuous stroke so the whole edge travels. The knife slices because it moves lengthwise; pressing straight down turns a slicing blade into a wedge. Let the blade depth hold the cut face flat and keep the knuckles clear of the board. If one 68090 draw does not cross the work, do not disguise repeated re-entry as technique: use the 68180 when the point is required, or the 68300 when it is not. A clean face is evidence that the blade crossed once; a scalloped face records every restart.

Follow joints; do not hack bone. When the specification crosses a joint, flex or rotate the piece until the soft joint space declares itself, then sever capsule and connective tissue with controlled strokes directed into the open joint and away from the off hand. When the required line crosses solid bone, the hand knife stops. Move to the approved saw or bone-cutting station. Chopping with the butcher knife damages the edge, throws fragments, defeats cut control, and asks a slicing pattern to do a machine’s work.

Separate first, trim second. Get the major subprimals clear and into their trays before detailed trimming. Then work one piece at a time: shave specified surface fat with long, nearly flat strokes; lift seam fat only to the cut sheet’s limit; remove exposed connective tissue where the specification calls for it; and preserve every saleable lean surface you can. USDA IMPS makes fat thickness, portion thickness/weight, shape, and workmanship purchasable requirements — these are not aesthetic guesses. Use the rule, scale, and cut sheet. A gleaming over-trimmed primal can be a yield failure wearing good knife work.

Portion from a square reference face. If the output includes steaks or chops, true one end only enough to establish a plane, then measure from that plane for each cut. Keep the blade vertical, draw across in one stroke, and weigh or gauge at the frequency the cut sheet requires. Do not correct a thin portion by cutting the next one thick; segregate the miss and recover it under the approved trim/portion plan. Consistency comes from returning to one reference face and one measured interval, not from eyeballing the growing stack.

Keep product identity and trim streams intact. Label or stage each subprimal as it leaves the block; separate saleable trim by the categories the establishment uses; keep inedible material unmistakably apart. Do not let a scrap pile become an anonymous mixture that later gets “remembered” into a product. This guide does not improvise those controls.

Work cold in batches and stop on the plant’s limit. Return finished trays and unused product to refrigeration on the schedule in the facility plan. At home or in a small retail room without a validated process limit, use the FSIS 40°F-or-below baseline, bring out one piece at a time, and do not let raw meat sit above 40°F for more than two hours. If the room, product, or handling record exceeds its limit, the answer is the facility’s hold-and-disposition procedure — never smell, color, or confidence.

Sanitation and knife control during the run

The same rule applies after contact with the floor, an inedible container, an unclean surface, or a contamination event. If a blade chips or a rivet loosens, stop, control the affected product, account for the missing material, and follow the foreign-material procedure.

Clean between incompatible operations as the program requires. Raw meat is not one undifferentiated category. Species changes, allergen or added-ingredient work, edible-to-inedible contact, diseased/contaminated material, and raw-to-ready-to-eat transitions may trigger separate controls. 9 CFR 416.4 supplies the performance rule — prevent insanitary conditions and adulteration — while the establishment’s SSOP supplies the actual frequency and method. Home users keep raw meat and its juices separate from other foods and wash/sanitize the board, knife, trays, scale contact surfaces, and hands before they touch anything ready to eat.

Stop when the method changes. NIOSH’s meatpacking study found greater cut risk when workers used an unusual work method or performed a task they did not routinely do. If a cut does not match training, the anatomy is unfamiliar, the product is frozen hard, the knife keeps meeting bone, or equipment has malfunctioned, stop and bring the lead cutter or supervisor to the bench. “Figure it out with more force” is exactly the method change that converts uncertainty into a laceration.

Reconcile yield before cleanup hides the evidence. Weigh or count the named outputs, saleable trim, fat, bone, and inedible waste to the degree the operation requires. Compare portion weights and fat limits to the cut sheet; quarantine anything whose identity or contamination status is uncertain. Good breaking is visible in the yield record: named product where the plan expected it, trim in the right stream, and no unexplained loss.

Clean and sanitize the station under the written procedure. Remove product and gross debris; clean; rinse if the chemical system requires it; sanitize at the labeled concentration and contact time; allow the required drain/dry step; and record or verify as the SSOP directs. Food-contact surfaces must be clean and sanitary, but this guide does not invent a universal water temperature, sanitizer concentration, or soak time — the approved chemical label and establishment procedure own those numbers.

Dry the carbon blade promptly and store it under the facility rule. High-carbon steel rusts when water sits on it. After the required wash and sanitation steps, dry the knife completely and place it in the clean, protected rack or scabbard designated by the establishment, never loose in a drawer or soaking in a sink.

What goes wrong (and the fix)

The cut face is scalloped. The blade was too short for the depth, or the cutter pressed down and restarted instead of drawing through. For ordinary bench work, sharpen and use the whole 68090 edge. If one full ten-inch draw still cannot cross, move to the 14-inch class: 68180 if the point is required; 68300 if it is not.

The knife suddenly runs when a seam releases. Too much pulling force and the off hand is in the release path. Reset the product so it is stable, expose the seam with gentle tension, use short outward strokes, and keep every body part behind the edge. A guard catches a sliding knife hand; it does not protect the hand placed in front of the cut.

The blade keeps striking bone. The anatomical line is wrong or the specified cut needs a saw. Stop, re-identify the joint or transfer the piece to bone-cutting equipment. Do not hammer, twist, or pry with the knife.

Fat smears and the piece squirms. Product too warm, edge too dull, or both. Return the meat to refrigeration under the facility plan and restore the edge at the designated station; extra force on warm product is not a workaround.

Portions drift thinner or thicker down the piece. No fixed reference face, no measuring rhythm, or a leaned blade. Re-square the reference end minimally, mark or gauge from it, keep the blade vertical, and verify weight/thickness at the required interval.

Yield disappears into “trim.” The cutter is carving muscle instead of following seams, or trimming to appearance instead of the specification. Slow down, expose natural seams, and use the written fat and workmanship limits. Saleable lean left on the fat pile is not quality.

The edge needs constant force. It is dull, damaged, or wrong for the material state. Steel when the edge is rolled, sharpen when steeling no longer restores it, reject a chipped blade, and use a saw on frozen-solid or bone-crossing work. A safety program that tolerates dull knives has preserved the hazard and removed the cut.

The handle becomes slick. Stop immediately. Put the knife in the designated rest, wash or change contaminated hand protection as the program requires, clean the handle under the SSOP, dry it, and resume only with a secure grip. Never “finish the cut first.”

A knife hits the floor or an inedible bin. Remove it from production, control affected product, and run the full cleaning/sanitation procedure. An apron wipe changes how the contamination looks, not what happened.

Where this job ends — honest scope

This guide teaches the mechanics shared by bench-breaking work: define the product, orient it, open seams under sight, cross with a full-edge draw, trim to a specification, maintain identity and cold, and keep the knife’s travel away from people. It is not a species-specific fabrication chart. The USDA IMPS beef, pork, lamb, veal, and goat documents are separate because the anatomy and named cuts are separate; a competent cutter trains on each.

It is also not a slaughter guide. Stunning, bleeding, hide removal, evisceration, inspection, carcass splitting, and specified-risk-material controls live upstream under legal and veterinary/public-health requirements that a bench-knife article cannot replace. Skinning and boning use their own knife patterns. Bone crossing uses approved saw equipment. Fully frozen product is saw territory.

The history footnote — from the butcher’s block to the numbered cut

It is a working pattern shaped over generations: deep enough to clear the knuckles at a block, long enough to draw across meat, and stout enough to hold a line. Massachusetts industrialized that pattern in the nineteenth century. Hyde’s relationship is ecosystem, not invention: its official company story places its trade-knife works in Southbridge, while neighboring Massachusetts cutlery houses carried butcher forms into shops and plants.

The bench itself is visible in the historical record. A [Library of Congress photograph of Henry J. Ridings’s Chicago butcher shop, circa 1901]( shows cut meat on counters and large pieces hanging behind the workers — the shop-scale world in which carcass became saleable cut by eye and hand. Modern procurement added a shared language to that work. USDA AMS’s Institutional Meat Purchase Specifications now define named products, separation diagrams, fat limits, portion requirements, and workmanship across species. The knife’s motion is old; the cut sheet is the modern contract. Good bench breaking is where the two meet.

No accepted Hyde source certifies the carbon-steel/hardwood butcher knives to a named USDA, NSF, or food-contact construction standard; suitability is facility- and SSOP-specific.

The 68180 guard hardware is unresolved. The catalog says “with Guard”; “heavy steel shield” belongs to the 68300 description and is not transferred.

The 68300 appears here because it is the actual round-tip safety choice needed to make the buyer fork truthful; graph inclusion remains a wiring decision.

No primary source found names an inventor of the broad American butcher-knife pattern; the history therefore treats it as an anonymous trade form and makes no invention-date claim.
